Ingredients:
Chocolate chips - 1/4 cup
Boiling water - 60 m
Eggs - 4 (separated)
Rum flavoring - 3 tsp
Vanilla wafers - 32
Water - 90 ml
Method:
Chocolate chips - 1/4 cup
Boiling water - 60 m
Eggs - 4 (separated)
Rum flavoring - 3 tsp
Vanilla wafers - 32
Water - 90 ml
Method:
- In a saucepan, pour boiling water over chocolate chips and stir to melt chips.
- Beat egg yolks, one at a time, into the chocolate mixture.
- Place pan over low heat and cook until thick.
- Remove from heat and cool completely.
- Add 1 tsp of the rum flavoring .
- Beat egg whites until stiff.
- Fold small amount of whites into chocolate mixture to lighten, then fold chocolate mixture into remaining egg whites.
- In a small cup, dilute the remaining rum flavoring with 90 ml water.
- Dip each wafer into flavoring.
- Place the 16 dipped wafers on bottom of 8" spring form pan, spread with half of chocolate mixture, top with remaining 16 dipped wafers, spread remaining chocolate mixture over top.
- Freeze until firm.
