Ingredients:
Eggs - 3
castor sugar - 4 tbsp
Water - 300 ml
Pineapple - 350 gms
Dates - 50 gms
Crystallized fruit - 125 gms
Dried figs - 25 gms
Arrowroot or cornflour - 1 tbsp
Method:

Method:
- Beat the eggs, 1 tbsp sugar and 4 tbsp of water together in a deep ovenproof dish.
- Place in a steamer and steam for 7 - 8 minutes until the mixture is set.
- Shred the pineapple, dates, crystallized fruit and figs finely.
- Mix all the fruit together and spoon over the egg custard.
- Mix the arrowroot or cornflour and remaining sugar together, then gradually blend in the water.
- Bring the mixture to the boil, stirring, and cook for 2 minutes.
- Spoon over the fruit and serve hot or cold.
