Method:
- Remove the top and bottom of the pineapple and cut away the skin.
- Cut the fruit into quarters lengthways, and remove the woody core.
- Cut the flesh into pieces, place in a liquidizer and blend until smooth.
- Pass through a sieve to remove fibres.
- Cut the oranges in half and squeeze and strain the juice. (approximately 850 ml)
- Cut the passion fruit into halves, the scoop the inner part into sieve placed over a bowl.
- Mash and extract juice approximately 150 ml.
- Mix all the juices in a mug.
- Half fill serving glasses with crushed ice. Pour the juice over the ice and decorate with orange slices and pineapple leaves.
