Ingredients:

Castor sugar - 100 gms
Plain flour - 100 gms
Cardamom or ginger powder - 1 tsp
Sour cream - 125 ml
Fresh butter - 50 gms (melted)
Method:
Eggs - 5

Method:
- Beat the eggs and sugar for about 10 minutes until thick and creamy.
- Sift flour with cardamom or ginger powder.
- Fold in small portions of flour and cream alternatively.
- Stir in melted butter, and leave the batter to stand for 10 minutes.
- Heat the waffle iron, pour in batter, and close top.
- Cook until golden and crisp.
- Serve with cranberry jam or other tart jam.
