LEMON GRANITA

A granita is the simplest of ices, the least sweet, not stirred while freezing eaten when it is the consistency of lightly packed snow.

Ingredients:
Sugar - 250 gms
Hot water or hot clear tea - 500 ml
Fresh lemon juice - 125 ml
Sweetened whipped cream

Method:

  • Dissolve sugar in water; chill.
  • Add lemon juice; freeze without stirring until crystals have formed (4-5 hours).
  • Serve topped with cream.
  • This is a very lemony mixture; use more water and less lemon if desired.

Variation:
Other fruit juices or combinations may be used.
