GREEN AND RED POTATOES

Ingredients:
Small potatoes - 8
Coriander leaves -  a bunch
green chillies - 6
Whole red chillies - 6
Lemons - 2
Coconut milk -1 cup
Salt - 1/2 tsp
Oil -2 tbsp

Method:

  • peel and prick the potatoes with a fork. Soak them in salted water for 30 minutes.
  • Heat oil; fry the potatoes for 2-3 minutes. Add coconut milk and cook over slow heat till potatoes are tender and the milk dries up.
  • Grind the red chillies with lemon juice and green chillies with coriander leaves.
  • Grind both separately. Add red paste to half the potatoes and remaining half with green chilli paste.
  • Pour a little more coconut milk over them and serve.
