Mixed Vegetable Curry - 2


Ingredients:
Potatoes -2
Carrots - 2
Peas - 50 gms
French beans - 50 gms
Cauliflower - 50 gms
Bottle Gourd - 50 gms
Capsicum - 1
Tomatoes - 2-3
Onion - 1
Green Chillies - 3
Red chilli powder - 1 tsp
Turmeric - 1/4 tsp
Salt to taste
Cumin seeds - 1/2 tsp
Curd - 1 tbsp
Coriander leaves
Oil - 2-3 tbsp

Masala to paste:
Fresh Coconut - 1

Cardamom - 2 
Cinnamon - 1" piece
Cloves - 4
Garlic cloves - 4
Coriander seeds - 1 tsp
Cumin seeds - 1/4 tsp
Ginger -  small piece

Method:

  • Finely chop onions and tomatoes, grind them to make paste.
  • Peel and cut potatoes, carrots and bottle gourd into medium size pieces.
  • Chop other vegetables in medium size.
  • Grind the masala ingredients to make paste and keep aside.
  • Heat oil in pressure cooker, add cumin seeds, fry.
  • Add chopped chillies and onion tomato paste, fry till the oil leaves.
  • Add spices, curd ,ground paste and 1/2 cup of water. Cook in low flame for 5 minutes. 
  • Then add all vegetables, fry them in high flame for 2 minutes.
  • Add 1 cup of water and close the lid. Cook up to 3 whistles and remove from fire.
  • Lastly add chopped coriander.
  • Serve with rice or roti.
