Vankaya Batani Kura (Brinjal- GreenPeas Curry)

Ingredients:
Brinjals - 250 gms
Green Peas - 1 cup (shelled)
Onion - 1
Green chillies - 2
Ginger garlic paste - 1 tsp
Fresh coconut - 1 tbsp (Grated)
Roasted channa powder - 1 tsp
Sal to taste
Turmeric - 1/4 tsp
Red chilli powder - 1 tsp
Urad dal - 1/2 tsp
Mustard & Cumin seeds - 1/4 tsp
Curry leaves - few
Oil - 1 tbsp
Coriander leaves

Method:

  • Chop onions, green chillies and brinjals.
  • Heat oil in kadai, add urad dal, cumin & Mustard seeds, curry leaves. Fry till mustard splutters.
  • Add chopped onions, green chillies and ginger garlic paste. Fry for 2 minutes.
  • Then add brinjal pieces, green peas, salt, turmeric and red chilli powder. Close the lid and cook in low flame till vegetables are soft. Stir occasionally and sprinkle little water if needed.
  • when peas are soft, add fresh coconut, channa powder, coriander leaves and fry for 2 minutes.
  • Serve
