Okra (Bhendi) with Eggs

Okra - 200 gms
Eggs - 2
Onion - 1
Green chillies - 2-3
Red chilli powder - 1 tsp
Turmeric - 1/4 th tsp
Salt to taste
Coriander leaves - 1 tbsp (chopped)
Oil- 2-3 tbsp


  • Wash and trim  the edges of okra. Cut them into medium size pieces.
  • Finely chop onions and green chillies.
  • Heat the oil in a pan, add chopped onions and green chillies, fry onions till light golden brown colour.
  • Add bhendi pieces, salt, turmeric and red chilli powder and cook them till they are tender.
  • Now transfer the curry to baking dish. Break the egg one at a time on the okras.
  • Bake in an oven  for 5-7 minutes till eggs are cooked and set.
