Ingredients:
All purpose flour - 2 cups
Egg - 1
Salt - 1 tsp
Baking soda -1/2 tsp
Brown Sugar - 1/2 cup
Sugar - 1/4 cup
Rolled oats - 1 cup
Butter or shortening - 3/4 cup
For date filling:
Dates - 1 cup (chopped)
Sugar - 1/2 cup
Water - 1/4 cup
Method:
For date filling:
All purpose flour - 2 cups

Method:
For date filling:
- Boil together all filling ingredients until thick, stirring constantly. Stir in 1/2 cup of chopped nuts.
- Cool before use.
For cookies:
- Sift flour, soda and salt together.
- Add sugar, shortening , egg and white sugar. Stir until smooth.
- Blend in rolled oats.
- Roll dough into 1/8" thick on lightly floured board. Cut with 2 1/2" round cutter.
- Place half the rounds on baking sheet. Spread 1 tsp of filling lightly on center of each cookie.
- Place the other round on top of filling. Seal edges.
- Bake for 12 to 15 minutes.
