Potato Omelette

Eggs - 4
Potatoes - 2 (boiled)
Onions - 2 (finely chopped)
Cheese - 3 tbsp (grated)
Green chillies - 4 (chopped)
Paneer  - 1/2 cup (small pieces)
Salt and pepper to taste
Lemon juice - 1 tsp
Butter - 3 tbsp


  • Peel and mash potatoes  and mix in egg yolks.
  • Add  onion, salt, pepper and green chillies.
  • Whisk whites until stiff. Add lemon juice and fold in potato mixture.
  • Melt half of the butter in  a frying pan. Pour in half the potato mixture and sprinkle grated cheese.
  • Cook over low heat until omelette is set. Then carefully transfer to plate.
  • Sprinkle paneer pieces on top and serve.
  • Do same with  remaining batter.
