Carrot Salad

Ingredients:
Carrots - 4
Coconut - 1/2
Moong Dal - 100 gm
Green chillies - 4-5
Salt to taste
Lemon juice - 1 tbsp
Coriander leaves - 1 tbsp (chopped)

For Talimpu:
Oil - 2 tsp
Mustard seeds - 1/4 tsp
Curry leaves - few

Method:

  • Soak moong dal for 1 hour. Drain the water completely after one hour.
  • Peel and grate carrots and coconut.
  • Finely chop green chillies.
  • In a mixing bowl, mix all the ingredients well.
  • Heat oil in a pan, add mustard seeds and curry leaves. Fry till mustard crackles.
  • Pour this over salad.
  • Toss well and serve.
