Menthi Vankaya Kura (Brijal with fenugreek seeds)

Brinjals - 250 gm
Red chillies -10
Urad dal - 1 tbsp
Fenugreek seeds - 1 tsp
Cumin seeds - 1 tsp
Salt to taste
Turmeric - 1/4 tsp
Oil - 3 -4 tbsp

  • Heat 1 tsp of oil, add red chillies, urad dal, fenugreek and cumin seeds. Fry till aroma comes. Cool and grind along with salt and turmeric to make powder.
  • Slit the brinjals into four and keep the top intact.
  • Fill the Masala inside the brinjals.
  • Heat oil in kadai, arrange brinjal pieces and fry in low flame till brinjals are soft.
  • Serve.
