Mushroom Stew

Ingredients:
Mushrooms - 250 gm (boiled)
Green chillies - 4
Ginger - 1 tbsp (chopped)
Coconut milk - 2 cups
Capsicum - 1
Carrot - 1
Salt to taste
Oil - 2 tbsp

Method:
  • Heat oil in a pan. Add chopped ginger and chillies and stir fry.
  • Now add boiled and chopped mushrooms and saute for some more time.
  • Add chopped capsicum and carrot and 1 cup of water.
  • Add salt and cook for 7-8 minutes.
  • Mix coconut milk and cook another 10 minutes in low flame.
  • Serve hot with rice.
