FRENCH COCONUT MACAROONS

Ingredients:
Egg whites - 4
Vanilla extract - 1 tsp
Sugar - 1 cup
Coconut flakes - 2 cups
All purpose flour - 1/2 cup

Method:

  • Beat egg whites with electric mixer until stiff peaks form. Add vanilla and mix well.
  • Add sugar gradually, beat well after each addition.
  • Beat until stiff and glossy.
  • Fold in coconut and flour, mix well.
  • Drop from teaspoon onto buttered and floured cookie sheet.
  • Bake in preheated oven for 25 minutes or until lightly browned.
