Large firm bananas - 4
Butter- 60 gm
Brown sugar- 3 tbsp
Dark rum - 1/2 cup
Angostura bitters - 1 tbsp
Toasted slivered almonds - 1/2 cup
Vanilla ice cream


  • Peel bananas and cut halves cross ways.
  • Heat butter in wok on low heat and when melted add the bananas and fry until golden all over, turning bananas carefully. 
  • Add sugar, half the rum and the Angostura bitters. When the sugar dissolves, transfer to a serving dish.
  • Scatter the toasted almonds over.
  • Heat remaining rum with 1 tsp of sugar, ignite and pour, flaming, over the fruit.
  • Serve hot, accompanied by vanilla ice cream.
