COCONUT ALMOND LOGS (NO BAKE)

Ingredients:
Cream cheese - 200 gms
Vanilla extract - 1/2 tsp
Sifted confectioners sugar - 3 cups
Quick cooking rolled oats - 2 cups
Coconut flakes - 1/2 cup
Almonds - 1/2 cup(slivered, blanched and chopped)
Toasted coconut flakes - 1 cup

Method:

  • Beat cream cheese with vanilla extract until creamy.
  • Add confectioners sugar gradually, beating until blended.
  • Stir in oats, 1/2 cup coconut, and almonds.
  • Shape mixture into 2" logs.
  • Roll logs in toasted coconuts to coat. Chill until firm. Store in refrigerator.
