Ingredients:
Apples - 4 (wiped and cored)
Seedless raisins - 50 gms
Sweet white wine - 120 ml
Grated lemon rind - 1/4 tsp
Castor sugar - 50 gms
Butter - 25 gms
Method:
Apples - 4 (wiped and cored)
Seedless raisins - 50 gms

Grated lemon rind - 1/4 tsp

Method:
- Soak raisins in wine for 30 minutes.
- Arrange apples in a shallow ovenproof dish.
- Drain raisins (reserving wine) and mix with lemon rind and sugar.
- Fill core holes with raisin mixture and top with a nut of butter.
- Pour over the remaining wine.
- Bake at 350 F for about 45 minutes.
- Serve hot or cold.
