ROAST CHICKEN IN BRANDY SAUCE

Ingredients:
Roasting chicken- 2 kgs
Salt- 1/2 tsp
Pepper- 1/4 tsp
Butter- 6 tsp
Onions- 1/4 cup (chopped)
Brandy- 3/4 cup
Heavy cream- 1/2 cup
Minced parsley- 1 tsp

Method:

  • Cut the chicken into serving pieces. Sprinkle with salt and pepper.
  • Melt the butter in an ovenproof skillet and brown the pieces of chicken in it evenly over moderate heat.
  • Add onion and continue to cook until its tender and glazed.
  • Add brandy and turn each piece of chicken so that it is coated with brandy.
  • Cover the pan tightly with aluminum foil and place in a 350 F oven for 25 min.
  • Then remove the foil and pour the cream into the chicken mixture.
  • Continue to cook at 350 F for 5 minutes longer.
  • Serve at once, piping hot, garnished with the minced parsley.
  • It can be served to 4-6 persons
