Ingredients:
Dried Chinese mushrooms - 5
Fish fillets - 500 gm
Salt -1/2 tsp
Black pepper -1/4 tsp
Sesame oil
Chinese preserved vegetables -3 tbsp (finely shredded)
Fresh red chillies - 2 (finely sliced)
Light soya sauce - 2 tsp
Spring onions - 2 (finely sliced)
Fresh coriander leaves -2 tbsp
Method:
Dried Chinese mushrooms - 5
Fish fillets - 500 gm

Method:
- Soak dried mushrooms in hot water for 30 minutes, then remove stalks and slice caps finely.
- While mushrooms are soaking wash fish fillets and dry well on paper towels.
- Season with salt and pepper.
- Put fish in dish lightly smeared with sesame oil, sprinkle with sliced mushrooms, preserved vegetables and chilli.
- Sprinkle soya sauce over, cover with foil and steam for 20 minutes.
- Garnish with spring onions and fresh coriander leaves, and serve with white rice.
