Ingredients:
Butter - 100 gms
Castor sugar - 100 gms
Orange rind - 1 (grated)
Eggs - 3
Self raising flour- 100 gms
Semolina - 100 gms
Fresh orange juice - 2 tbsp
Icing sugar
Method:
Butter - 100 gms

Method:
- Cream butter, sugar and orange rind until light and fluffy.
- Beat in eggs one at a time.
- Fold in sieved flour and semolina and then orange juice.
- Turn into a greased cake tin and bake in centre of a moderate oven, 370 F for 1 - 1 1/4 hours.
- Dust with icing sugar before serving.
