PANDU MIRAPA KAYA PACHCHADI (RIPE RED CHILLI PICKLE)

Ingredients:
Ripe red chilli - 2 kg
Tamarind -750 gm
Fenugreek seeds - 150 gms
Mustard seeds - 75 gms
Salt

For Talimpu:
Oil - 1 kg
Red chillies - 25
Garlic -100 gms (crushed)
Channa dal - 1 tbsp
Urad dal - 1 tbsp
Mustard seeds - 1 tbsp

Method:

  • Remove the stem and coarsely crush the mirchi along with salt.
  • Put the chilli in jar with tamarind and close the lid. Keep aside for 3 days.
  • On forth day, Dry roast fenugreek; grind it to make powder.
  • Powder the mustard seeds also.
  • Now grind chilli mixture with tamarind, fenugreek and mustard powder.
  • Heat oil in kadai, add all talimpu ingredients and fry till mustard crackles.
  • Remove from the flame and let it cool.
  • Stir talimpu in the pickle. 
  • Store in airtight container or earthern pot.
                            పండు మిరపకాయ పచ్చడి 

కావలిసిన వస్తువులు:
పండు - 2  కిలోలు 
చింత పండు - 3/4 కిలో 
ఉప్పు 
మెంతులు - 150 gm 
 ఆవాలు - 75 gms 

తాలింపు:
 నూనె -  1 కిలో 
ఎండు మిర్చి - 25
వెల్లులి - 100 gm (దంచినది )
మినపపప్పు - 1 tbsp 
సెనగ పప్పు - 1 tbsp 
ఆవాలు - 1 tbsp 

తయారీ:
  • పండు మిర్చి తొడిమలు తీసి ఉప్పు వేసి కచ్చాపచ్చాగా దంచి, జాడీలో పెట్టాలి. 
  • గింజలు లేకుండా చింత పండుని ఆ మిర్చి ముద్దా మద్యలో ఉంచాలి. 
  • మెంతులు వేయించి పొడి కొట్టుకోవాలి. ఆలాగే ఆవాలు  కూడా పొడి కొట్టుకోవాలి. 
  • 3 రోజులు ఉరనిచ్చి, 4 వ రోజున తీసి ఆవ పిండి, మెంతి పిండి కలిపి  మెత్తగా రుబ్బుకోవాలి. 
  • బాణలిలో నూనె వేసి తాలింపు దినుసులు వేసి వేగనిచ్చి దించేయాలి. 
  • నూనె చల్లారిన తరువాత పచ్చడిలో కలపి జాడీలోకి పెట్టుకోవాలి
