Onions - 2 (chopped)
Garlic cloves - 3 (crushed)
Ginger - 1 tsp (finely grated)
Chilli powder - 1 tsp
Tobasco - 1 tsp
Sugar - 1 tsp
Salt- 1 tsp
Wine - 3/4 cup
Chicken stock - 3/4 cup
Corn flour - 2 tbsp mixed with 4 tbsp of water
Oil - 2 tbsp


  • Heat oil and fry onions, garlic and ginger.
  • Add all the ingredients except cornflour and bring to a boil.
  • Add corn flour mixture and stir well, until it thickens. Remove from fire and use immediately.
  • This sauce is served with fish and meat dishes. It can also be served for vegetarian dishes by using vegetable stock instead of chicken stock.
  • Can be stored in refrigerator.
