Large ripe pineapple - 1
Large juicy oranges - 8
Passion fruit - 8
Orange slices and pineapple leaves for decoration


  • Remove the top and bottom of the pineapple and cut away the skin.
  • Cut the fruit into quarters lengthways, and remove the woody core.
  • Cut the flesh into pieces, place in a liquidizer and blend until smooth.
  • Pass through a sieve to remove fibres.
  • Cut the oranges in half and squeeze and strain the juice. (approximately 850 ml)
  • Cut the passion fruit into halves, the scoop the inner part into sieve placed over a bowl.
  • Mash and extract juice approximately 150 ml.
  • Mix all the juices in a mug.
  • Half fill serving glasses with crushed ice. Pour the juice over the ice and decorate with orange slices and pineapple leaves.
