Ingredients:
Small fresh pineapple - 1
Large Oranges - 2
Large bananas - 2
Strawberries - 250 gms
Plain yoghurt - 1/2 cup
Orange juice - 2 tbsp
Lemon juice -2 tbsp
Blanched Almonds - 2 tsp (chopped)
Butter - 1 tbsp
Honey - 2 tbsp
Fresh Ginger - 1 tsp (grated)
Fresh or dried dates - 1/4 cup
Walnuts - 1/4 cup
Unsalted sunflower seeds - 1/4 cup
Method:

Method:
- Prepare pineapple fans by shaving off outer skin, then cutting out eyes in the spiral pattern in which they grow. Slice across thinly, cut out core with a small scone cutter and cut each slice in half.
- Peel oranges and remove skinless segments with a sharp knife.
- Slice bananas and brush with lemon juice.
- Wash and hull strawberries.
- Put all the fruit into a bowl and chill, covered, for 2 hours.
- Put yoghurt, juices, almond, butter, honey and ginger into a blender or food processor and blend until smooth.
- Add dates, walnuts and sunflower seeds to the fruit, pour yogurt mixture over and toss lightly.
- Serve immediately.
