Ingredients:
Boiled rice - 400 gms
(preferably rice that has been cooked the previous day)
Eggs - 2
Spring onions - 2 (chopped)
Garlic cloves - 6 (finely chopped)
Soy sauce - 3 tbsp
Butter - 1 tbsp
Vegetable oil
Salt and pepper to taste
Method:
Boiled rice - 400 gms

Method:
- Finely chop the spring onions and garlic.
- Heat a little oil in a wok or large frying pan and when it starts to smoke, add the garlic and fry until golden.
- Now add the rice and stir fry over a high heat.
- When it is very hot, make a well in the centre of the wok or frying pan, ad incorporate the butter and whole egg.
- Mix carefully and stir fry again.
- Add the soy sauce and season to taste.
- Before serving, add the chopped spring onions and mix well.
- Serve hot.
