BRINJAL SWEET POTATO CURRY (VANKAYA CHILAKADA DUMPA KURA)

Ingredients:
Brinjals - 250 gms
Sweet potato - 100 gms
Turmeric - 1/2 tsp
Salt to taste 
Chilli powder - 1 tsp
Green chillies - 2-3
Mustard seeds - 1/4 tsp
Cumin seeds - 1/4 tsp
Urad & Chana dal - 1/2 tsp
Oil - 1 tbsp
Curry leaves -  few

Method:

  • Peel and chop sweet potato into pieces and keep them in water.
  • Chop the brinjals and keep them in water.
  • Heat oil in kadai, add urad dal, channa dal, cumin & mustard seeds, curry leaves. Fry them.
  • Add drained sweet potato pieces, green chillies and brinjal pieces, salt and turmeric.
  • Stir fry for 2 minutes then close the lid and cook in low flame until vegetables are tender and well cooked. Stir occasionally.
  • Add chilli powder; mix gently and cook another 2 minutes.
  • Serve with rice or chapathi.

      వంకాయ చిలకడ దుంప కూర 

కావలిసిన వస్తువులు:
వంకాయలు - 250 గ్రా 
చిలకడ దుంపలు - 100 గ్రా 
పచ్చి మిర్చి - 2-3
ఉప్పు 
పసుపు - 1/2 చెంచా 
కారం - 1 చెంచా 
ఆవాలు - 1/4 చెంచా 
జీలకర్ర - 1/4 చెంచా 
మినపపప్పు, సెనగ పప్పు - 1/2 చెంచా 
నూనె - 1 tbsp 
కరివేపాకు - కొద్దిగా 

తయారీ:
  • చిలకడ దుంపలు చెక్కు తీసి చిన్న ముక్కలుగా కోసుకొని నీళ్ళలో వేసుకోవాలి. 
  • వంకాయలు కూడా కోసి నీళ్ళలో వేసుకోవాలి. 
  • బాణలిలో నూనె వేడి చేసి ఆవాలు, జీలకర్ర, మినప పప్పు, సెనగ పప్పు, కరివేపాకు  వేసి వేయున్చుకోవాలి 
  • తరువాత పచ్చి మిర్చి, దుంప ముక్కలు, వంకాయ ముక్కలు, పసుపు, ఉప్పు, వేసి మూత పెట్టి సన్నని సెగ మీద మగ్గనివ్వాలి. 
  • చివరకు కారం వేసి రెండు నిమషాలు మగ్గనివ్వాలి. 
  • ఈ కూర అన్నంలోకి, చపాతీలోకి బాగుంటుది
