KORIVI KARAM

Ingredients:
Fresh red chillies - 1 kg
Salt - 500 gms
New Tamarind  - 250 gms
Fenugreek seeds - 70 gms
Asafoetida - 3 gms
Oil - 250 gms

Method:

  • Wash and dry red chillies in sunlight for one hour until completely dry without any wetness.
  • Remove the stems and grind chillies along with salt and tamarind to make paste.
  • Keep the ground paste in earthern pot and close the lid. Keep aside for 3 days.
  • On third day, take out the mirchi paste from jar. Remove tamarind seeds if any and grind once again.
  • Dry roast fenugreek and powder them. Fry asafoetida in little oil and grind it to make powder.
  • Heat the oil in kadai; when the oil is hot switch off the flame and let it cool.
  • Add ground mirchi, asafoetida and fenugreek powder and mix well.
  • Transfer to dry jars. The pickle stays up to one year.

                   కొరివి కారం

కావలిసిన వస్తువులు:
పండు మిరప కాయలు - 1 kg
ఉప్పు - 500 gms
కొత్త చింత పండు - 250 gms
మెంతులు - 70 gms
ఇంగువ - 3 gms
నూనె - 250 gms

తయారీ:

  • పండు మిరప కాయలు కడిగి కాసేపు ఎండలో ఆరపెట్టుకోవాలి. తడి లేకుండా ఆరిన తరువాత ముచ్చికలు తీసివేసి ఉప్పు, చింతపండు కలిపి రుబ్బుకోవాలి. 
  • దానిని జాడీలో పెట్టి మూత పెట్టి మూడు రోజులు పక్కన పెట్టుకోవాలి. 
  • మూడో రోజు తీసి చింత పండు గింజలు తీసి మళ్ళి మెత్తగా రుబ్బుకోవాలి. 
  • మెంతులు  వేయించి మెత్తగా పొడి చేసుకోవాలి. 
  • ఇంగువ కొద్దిగా నూనెలో వేయించి పొడి కొట్టుకోవాలి. 
  • నూనె కాచి చల్లారిన తరువాత అందులో రుబ్బిన పచ్చడి, మెంతి పొడి, ఇంగువ వేసి బాగా కలుపుకోవాలి. 
  • దీనిని జాడీలో పెట్టుకొంటే చాలా రోజులు నిల్వ ఉంటుంది
