Boned chicken breasts - 450 gms
Corn flour - 1 tbsp
Light soy sauce - 2 tbsp
Dry sherry - 2 tbsp
Sugar - 1 tsp
Oil -2 tbsp
Fresh ginger - 1/2" (finely chopped)
Spring onions - 6 (sliced)
Garlic cloves - 2 (crushed)
Almonds - 125 gms (blanched and split)
Salt and pepper to taste


  • Rub the chicken cubes all over with corn flour. Set aside.
  • Combine the soy sauce, sherry and sugar in a bowl.
  • Heat the oil in a large frying pan. Add the ginger, sprig onions and garlic and stir fry for 30 seconds.
  • Add the chicken ad stir fry for 2-3 minutes.
  • Add the almonds and saute for one minute.
  • Pour in the soya sauce mixture, pepper and salt; cook for few minutes or until done.
  • Serve immediately.
