All purpose flour - 2 cups
Salt -  a pinch
Butter - 3/4 cup (softened)
Egg yolks - 2 (lightly beaten)
Water - 2 tbsp


  • Place flour  and salt in a large bowl.
  • Make a well i the centre and put into it in the butter, yolks, and water.
  • Using your fingertips, gradually pull in the flour.
  • Mix until all the ingredients are well combined and dough forms a ball. Cover.
  • Chill several hours before using.
  • Preheat oven to 450 degrees. Roll out the dough and place in a 9" pie pan.
  • Prick the bottom several times with a fork.
  • Bake 12-15 minutes, or until crust is crisp but not brown.
