Ingredients:
Rolled oats - 1/3 cup
Cornmeal - 1/3 cup
All purpose flour - 1/3 cup
Sugar - 2 tbsp
Baking powder - 1 tsp
Baking soda- 1/2 tsp
Salt - 1/4 tsp
Eggs - 2 (separated)
Buttermilk - 1 cup
Salad oil
Method:
Rolled oats - 1/3 cup

Method:
- Combine oats, cornmeal, flour, sugar, baking powder, soda, and salt in a bowl.
- In another bowl, whisk egg yolks and buttermilk until blended.
- Pour liquid into dry ingredients, stirring just until evenly moistened.
- With an electric mixer, beat egg whites at high speed until soft peaks form.
- Gently fold whites into batter.
- Heat an electric griddle to 375 or heat a wide frying pan or griddle over medium high heat until a drop of water sizzles on it.
- Brush lightly with oil. For each pancake, spoon about 1/3 cup of batter onto griddle.
- Cook until top is set and bottom is browned about one minute.
- Turn and cook until other side is browned.
- Serve with fresh fruit or syrup.
