HEARTY HEALTHY HOTCAKES

Ingredients:
Rolled oats - 1/3 cup

Cornmeal - 1/3 cup


All purpose flour  - 1/3 cup


Sugar - 2 tbsp


Baking powder - 1 tsp


Baking soda- 1/2 tsp


Salt - 1/4 tsp


Eggs - 2 (separated)


Buttermilk - 1 cup


Salad oil


Method:

  • Combine oats, cornmeal, flour, sugar, baking powder, soda, and salt in a bowl.
  • In another bowl, whisk egg yolks and buttermilk until blended.
  • Pour liquid into dry ingredients, stirring just until evenly moistened.
  • With an electric mixer, beat egg whites at high speed until soft peaks form.
  • Gently fold whites into batter.
  • Heat an electric griddle to 375 or heat a wide frying pan or griddle over medium high heat until a drop of water sizzles on it.
  • Brush lightly with oil. For each pancake, spoon about 1/3 cup of batter onto griddle.
  • Cook until top is set and bottom is browned about one minute.
  • Turn and cook until other side is browned.
  • Serve with fresh fruit or syrup.
