Ingredients:
Plain flour - 300 g (11 oz)
Baking powder - 2 1/2 tsp
Salt - 1/2 tsp
Caster sugar - 150 g (5 oz)
Brown sugar - 75 g (3 oz)
Grated lemon rind - 1 tsp
Grated orange rind - 1 tsp
Butter (or) Margarine - 150 g (5 oz)
Eggs - 2
Single cream - 2 tbsp
Method:

Method:
- Sift the flour, baking powder and salt into a bowl. Stir in the sugars and rinds.
- Rub in the butter or margarine until the mixture resembles crumbs. Add the eggs and cream and mix to a smooth dough.
- Drop heaped teaspoonfuls of the mixture onto greased baking sheets, well spaced apart to allow for spreading.
- Cook in a preheated moderate oven (180 C/350 F, Gas Mark 4) for 15 to 20 minutes or until lightly browned. Cool on a wire rack.
