Spinach - 500 g
Olive oil - 1/2 cup
Juice of one lemon
Lemon rind - 1 (grated)
Garlic - 3 pods (finely chopped)
For garnishing:
Some croutons


  • Wash the spinach and cut into pieces, removing the stalks. Drain and thoroughly dry.
  • Heat together the oil, lemon juice, grated rind and garlic in a sauce pan.
  • Put the spinach in a large salad bowl. Pour the heated sauce over it and toss gently.
  • Season to taste with salt and pepper and garnish with croutons.
