SANTULA-MIXED VEGETABLES

Ingredients:
Potatoes-2
Brinjal-1
Red pumpkin-250 gms
Beans-100 gms
Carrots-100 gms
Drumsticks-2 
Snake gourd-100 gms
Paanch-phoron-1 tbsp
Mustard oil-2 tbsp
Green chillies- 2 or 3
Sugar-1 tbsp
Salt to taste

Method:


  • Chop the vegetables into bite sized pieces.Heat oil in a large vessel.
  • Add paanch-phoron. Wait till the condiments splutter.
  • Add all the chopped vegetables,salt and slit green chillies.
  • Cover and cook the vegetables in own juice,on slow fire.
  • Stir occasionally.Do not add water.
  • The whole process will take 10 mins.
  • Add sugar and mix well.
  • The consistency should be such that the vegetables will be intermingled with each other.
  • Best served with steamed rice.

కావలిసిన వస్తువులు:
బంగాళా దుంపలు - 2
వంకాయ - 1
ఎర్ర గుమ్మడి - 250 గ్రా 
బీన్స్ - 100 గ్రా 
క్యారెట్ - 100 గ్రా 
ములక్కాయ - 2
పొట్ల కాయ - 100 గ్రా 
పచ్చి మిర్చి - 2-3
పంచ్ పోరాన్ - 1 tbsp 
ఆవ నూనె - 2 tbsp 
పంచదార - 1 tsp 
ఉప్పు 

తయారీ:
  • కూరగాయలు అన్ని కడిగి చిన్న ముక్కలుగా కోసుకోవాలి. 
  • బాణలిలో నూనె వేడి చేసి  అందులో పంచ్ పోరాన్ వేసి వేయుంచుకోవాలి. 
  • అందులో అన్ని ముక్కలు, ఉప్పు, పచ్చి మిరపకాయలు వేసి మూత పెట్టి సన్నని సెగ మీద మగ్గనివ్వాలి. 
  • అప్పుడప్పుడు కలుపుతూ దగ్గర పడ్డాక పంచదార వేసి కలిపి దించుకోవాలి. 
  • ఇది వేడి అన్నంలోకి బాగుంటుంది.
