COD CREOLE

Ingredients:
Cod fillets-450 gms
Lemon juice-1 tbsp
Olive oil-10 ml
Onion-1
Green pepper-1
Cayenne pepper-1/2 tsp
Garlic salt-1/2 tsp
Chopped tomatoes-400 gms

Method:

  • Cut the cod fillets into bite size chunks and sprinkle with the lemon juice.
  • In a large pan,heat the olive oil and saute the onion and pepper gently until softened.Add the cayenne pepper and garlic salt.
  • Stir in the cod chunks with the chopped tomatoes.Bring to a boil,then cover and simmer for about 5 minutes,or until the fish flakes easily when tested with the tip of a sharp knife.
  • Serve with boiled rice or potatoes.
