Dried apricots - 3/4 cup (chopped)
Sugar - 1/2 cup
Water - 1/2 cups
Margarine - 90 gms
Egg -1
Wholemeal self-raising flour - 1/2 cup
White self raising flour -1/2 cup
Slivered almonds- 1/4 cup


  • Place apricots, sugar, water and margarine in a saucepan and stir over a low heat until boiling.
  • Remove from heat and allow to cool.
  • Beat in egg and then stir in flours and mix well.
  • Place in a greased 7" ring cake tin and sprinkle almonds over top.
  • Press in lightly.
  • Bake in a moderate oven 35-40 minutes until cooked.
