Ingredients:
Large sweet red pepper -2 (cut into strips)
Pot barley - 1 cup
Mushrooms - 1 cup (diced)
Onion -1 (chopped)
Salt - 1/4 tsp
Pepper - 1/4 tsp
Stock - 2 cups
Vegetable oil -1/4 cup
Method:

Method:
- Heat oil and saute pepper, barley, mushrooms and onion in large skillet for 3-5 minutes. Stir in stock, salt and pepper to taste.
- Bake covered, stirring occasionally at 350 F for 45-50 minutes until the barley si tender and the liquid has been absorbed.
- Serve hot.
