TOMATO PERUGU PACHADI

Ingredients:
Ripe tomatoes - 250 gms
Green chillies - 2
Onion - 1 1/2 tbsp (chopped)
Coriander leaves -  1 tbsp
Fresh coconut - 2 tsp (grated)
Fresh thick curd - 3/4 cup
Salt to taste
Mustard seeds - 1/4 tsp
Oil -1 tbsp

Method:

  • Wash and finely chop tomatoes. Heat little oil and cook tomatoes till it becomes pulpy and moisture is absorbed. 
  • Allow to cool. Mix with chopped onion, coriander leaves, salt and grated coconut.
  • Heat little oil, add mustard and green chillies and fry them.
  •  Add to the tomato mixture.
  • Before serving stir in whipped curd.
