SALMON WITH GREEN VEGETABLES

Ingredients:
Smoked salmon - 90 gms (cut into thin strips)
Asparagus spears - 8 
(blanched in boiling water until tender crisp)
Cos lettuce, butter lettuce orr baby spinach
Pine nuts - 1/2 cup (toasted)

Dressing:
Whole egg mayonnaise or creme Fraiche - 4 tbsp
Chives - 2 tbsp (chopped)
Dijon mustard - 1 tsp or to taste

Method:

  • Place salad ingredients in a bowl.
  • Mix together dressing ingredients and pour over salad.
  • Toss well and serve immediately.
Variations:
  • Add slices of avocado to the salad.
  • try a salad with a pieces of crisp fried bacon instead of the salmon.
  • Replace the asparagus with raw strips of cucumber.
