CHEESE AND ANCHOVY SANDWICHES

Ingredients:
White bread - 4 slices
Anchovy fillets - 8
Pepper
Mozzarella cheese - 4 thin slices
Oil or butter for frying

Method:

  • Remove the crusts from the bread and cut each slice in half. 
  • Put a slice of cheese on one half, sprinkle with pepper and criss-cross with the anchovy fillets. 
  • Press the other half slice of bread on top.
  • Heat the oil in a pan and fry the sandwiches until brown on one side and the cheese has melted, then turn and brown the other side.
  • Avoid turning the crostini before the cheese has melted or the two pieces of bread will not stick together.
