Potatoes - 500 gms
Onions - 200 gms
Butter - 25 gms
Cheese - 150 gms (grated)
Salt and pepper


  • Peel and slice the potatoes thinly and dry them in a cloth.
  • Slice onions thinly.
  • Melt butter in a frying pan. Put in a layer of potatoes, the onions, cheese and finish with another layer of potatoes, seasoning well between each layer.
  • Fry gently for about 25 minutes then place under grill for a further 5 minutes to brown.

Shelled peas - 450 gms
Chicken stock - 900 ml
Parsley sprigs - 2
Mint sprigs -2
Granulated sugar - 1/2 tsp
Spring onions - 3 (trimmed)
Butter - 50 gms
Flour - 15 gms
Milk - 300 ml
Salt and freshly ground pepper
Fresh mint or spring onion tips to garnish


  • Put the peas, stock, parsley, mint, sugar and onions in a large saucepan.
  • Cover and simmer for about 40 minutes until the peas are soft.
  • Remove the parsley, mint and spring onions and blend the peas and stock to form a puree.
  • Blend the butter, flour and milk together until smooth.
  • Pour into  a saucepan and bring to the boil, stirring all the time, to thicken.
  • Cook gently for 2-3 minutes.
  • Stir in the pea puree and reheat gently.
  • Add seasoning to taste.
  • Serve garnished with chopped mint or spring onion tops.

Flour - 2 cups
Baking powder - 1 tsp
Baking soda- 1/4 tsp
Ground nutmeg - 1/2 tsp
Ground clove -1/4 tsp
Ground cinnamon -1/2 tsp
Brown sugar - 1/2 cup
Almonds - 1/2 cup (blanched and sliced)
Raisins - 1 cup
Peanuts - 1/2 cup
Glazed peels and cherry - 2 cups
Salt - 1/2 tsp
Butter - 3/4 cup
Honey - 1 cup
Eggs - 3


  • Beat butter and brown sugar till fluffy, add in beaten eggs.
  • Mix sifted flour, baking powder, soda, salt and spices together.
  • Then mix honey and fruit, dusted with flour.
  • Line the loaf tin with greased brown paper and in it pour the cake mixture.
  • Bake at 350 F till wooden pick comes out smoothly.
  • Cool cake on wire rack and peel off paper.
  • Store in a tightly closed cake box.
  • Serrve it without icing with morning tea.

Potatoes-2 (boiled)
Eggs- 4
Onions - 2 (finely chopped)
Grated cheese -3 tbsp
Green chilies - 3-4 (chopped)
Salt to taste
Paneer pieces - 1/2 cup
Lemon juice - 1/2
Black pepper - 1/2 tsp
Butter - 1 tbsp


  • Peel and mash boiled potatoes with egg yolks.
  • Add onion, salt, pepper and green chillies.
  • Whisk whites until stiff.
  • Add lemon juice and fold in potato mixture.
  • Melt butter in a frying pan; pour in half the potato mixture and sprinkle grated cheese.
  • Cook over slow heat until the omelette set.
  • Then carefully transfer to plate. 
  • Do the same with remaining mixture.
  • Sprinkle paneer piece on top and serve hot with salad ad sauce.

Butter - 100 gms
Castor sugar - 100 gms
Large eggs - 2 (lightly beaten)
Self raising flour - 100 gms (sieved)

For the filling and topping:
Strawberry jam - 2 tbsp
Castor sugar - 2-3 tsp


  • Well grease two 6 or 7" sandwich tins. 
  • Cream butter and sugar until pale and creamy, then beat in the eggs. 
  • Add a tbsp of flour with the last amount of egg to prevent curdling.
  • Fold in the rest of the flour with a metal spoon,then divide the mixture equally between the two tins.
  • Bake in a moderate oven for about 20 minutes.
  • When the cake is cooked the colour should be pale golden and shrinking away from the edges of the tins and when lightly pressed with the finger, should spring back into shape.
  • Turn out to cool on a wire tray.
  • When completely cold, sandwich together with jam and dust with the castor sugar.

Apples - 2 (cored and sliced)
Lemon juice - 2 tsp
Celery stalks - 3 (sliced)
Walnut - 2 tbsp (roughly chopped)
Mayonnaise - 4 tbsp
Freshly ground black pepper


  • Place apples in a bowl.
  • Pour lemon juice over it and toss to coat.
  • Add celery, walnuts and mayonnaise and toss to combine.
  • Season to taste with black pepper.

Apple and Cheese Pie

Short Crust Pastry - 400 gms
Green Apples - 500 gms
Corn Flour - 1 tsp
Clove Powder -  a pinch
Castor Sugar - 75 gms
Cheddar Cheese - 75 gms (grated)
Milk for brushing


  • Peel and slice the apples.
  • Heat the oven to 220 C. Roll out half  the pastry and use it to line a 20 cm/8 in a pie plate.
  • Toss the apple slices in corn flour, clove powder and sugar and place half the mixture on the pastry to cover evenly with the cheese and top with the remaining mixture.
  • Roll out the remaining pastry on top of mixture. Cover the top completely. Moisten the edges and seal well together.
  • Flute the pastry edges neatly and cut a steam vent in the top crust.
  • Brush all over with milk.
  • Place in the oven for 15 minutes. Reduce the temperature to 180 C and continue cooking for further 25 minutes or until the pie is golden brown.
