VEGETABLE CHOWDER

Ingredients:
Potato (diced) - 1
Carrots (grated) - 3
Onion (diced) - 1
Celery stalk (diced) - 1
Butter - 30 ml
Rolled oats - 30 ml
Vegetable stock (or) Water - 250 ml
Milk - 500 ml
Tomato juice - 250 ml
Salt
Pepper 
Basil

Method:

  • Lightly brown raw vegetables in the fat, in a large saucepan.
  • Add rolled oats  and enough water or vegetable stock to cover.
  • Cover and simmer until vegetables are tender (20 min).
  • Measure liquid and add milk to make 750 ml.
  • Slowly add the tomatoes; taste, season; reheat but do not boil. Serve immediately.

POTATO PANCAKES

Ingredients:
Flour - 50 gms
Potatoes - 750 gms (grated)
Small onion - 1 (finely chopped)
Eggs - 2 (lightly beaten)
Salt and pepper
Butter or oil - 50 ml

Method:

  • Combine all the ingredients except oil to make batter.
  • Heat a heavy frying pan; add only enough oil to lightly coat the bottom and heat until a drop of water will sizzle in the pan. Reduce the heat.
  • Pour ladleful of batter onto heated pan. Flatten the batter and cook until crisp and brown on both sides.
  • Keep cooked pancakes in a warm place until all the batter has been used.
  • Serve pancakes with sour cream or sauce.

TOMATO ASPIC

Ingredients:
Tomato juice - 100 ml
Heated tomato juice - 750 ml
Gelatine - 30 ml
Sugar - 10 ml
Worcestershire sauce - 5 ml
Lemon juice - 30 ml
Celery salt and /or onion salt


Method:

  • Soften gelatin in the smaller amount of juice; heat part of remaining juice.
  • Dissolve gelatine in hot juice; stir in remaining ingredients; adding celery salt, onion salt, or other seasoning to taste.
  • Cool and pour into prepared moulds; chill.
Variations:
When mixture is partly set, stir in any of; chopped parsley, hard-cooked egg slices, diced celery, well drained cooked peas, stuffed olives, pickles or peeled chopped tomato. Mayonnaise may be beaten in.

LEMON GRANITA

A granita is the simplest of ices, the least sweet, not stirred while freezing eaten when it is the consistency of lightly packed snow.

Ingredients:
Sugar - 250 gms
Hot water or hot clear tea - 500 ml
Fresh lemon juice - 125 ml
Sweetened whipped cream

Method:

  • Dissolve sugar in water; chill.
  • Add lemon juice; freeze without stirring until crystals have formed (4-5 hours).
  • Serve topped with cream.
  • This is a very lemony mixture; use more water and less lemon if desired.

Variation:
Other fruit juices or combinations may be used.

FINNAN HADDIE OR SMOKED FILLETS IN MILK

Ingredients:
Finnan haddie or smoked fillets - 1 kg
Butter - 30 ml
Milk - 250 ml

Method:

  • Cover fish with boiling water and simmer 10 minutes if fresh, 20 min if frozen. Drain.
  • Add butter and milk to fish and bake 15 min at 180 C or simmer on top of the stove until fish is tender and flakes.

STIR- FRIED CHICKEN AND ALMONDS

Ingredients:
Raw, boned chicken - 375 gms
Blanched almonds - 125 gms
Oil - 2 tbsp
Fresh or frozen peas - 125 gms
Celery - 250 gms (finely sliced)
Mushrooms, water chestnuts, bamboo shoots - 125 gms
Water - 125 ml
Soy sauce - 1 tbsp
Salt and pepper to taste

Method:

  • Cook almonds quickly in oil until golden, remove from pan and set aside.
  • Brown chicken and add vegetables, one variety after another at intervals, stirring constantly and adding liquid if needed.
  • If much liquid remains after the chicken and vegetables are cooked, thicken it by stirring into it a paste made by combining a little cornstarch with twice the quantity of cold water.
  • Add the almonds to the chicken; serve at once.

SPANISH MOOSE STEAK

Ingredients:
Moose or Caribou steak - 1 kg
Flour - 50 gms
Salt and pepper to taste
Fat - 2 tbsp
Green pepper - 1 (chopped)
Garlic clove - 1 (minced)
Small onions - 6 (sliced)
Canned Tomatoes - 250 gms
Peas - 250 gms

Method:

  •  Dredge meat with seasoned flour; brown on both sides in hot fat; remove from the pan.
  • Saute the pepper and garlic in the remaining fat in the pan.
  • Place the pepper and garlic on the meat; replace it in the pan; add the onions and tomatoes; simmer until tender; about 2 hours.
  • Shortly before the meat is cooked add the peas and more seasoning if necessary.
  • Arrange on a platter with the vegetables on top; surrounded with a border of potato puffs.


WALDROF SALAD

Ingredients:
Red apple - 400 gms (cored and diced)
Celery - 250 gms
Mayonnaise - 150 gms
Walnuts - 50 gms

Method:

  • Prepare apples, leaving on red skins.
  • Combine immediately with mayonnaise; add celery; chill.
  • At serving time, stir in walnuts and transfer mixture to lettuce cups.
  • Garnish with leafy tips of celery,parsley, or watercress.

TOURTIERE (PORK PIE)

Ingredients:
Minced lean pork - 500gms
Ground veal - 500 gms
Onions - 2 (chopped)
Garlic clove - 1 (minced)
Salt and pepper to taste
Celery salt - 1/2 tsp
Savory - 1 tsp
Ground cloves -1/3 tsp
Water - 250 ml
Fine, soft bread crumbs - 125-250 gms
Pastry

Method:

  • In a large saucepan, combine all the ingredients except bread crumbs and pastry, and bring mixture to the boiling point.
  • Cook uncovered on low heat with frequent stirring for 30 min to break up the meat.
  • Add the lesser quantity of crumbs and if after 10 minutes most of the liquid fat has been absorbed, add no more. If necessary, add more crumbs in a similar manner; cool.
  • Fill 2 large or 8 individual pastry lined pie pans with meat mixture; add top layer of pastry, cut to let the steam escape, and seal edges.
  • Bake until the top is a golden brown, about 30-40 min at 200 C.

FLORIDA CREAM

Ingredients:
Cream cheese - 113 gm
Icing sugar - 30 ml
Orange juice -1 tbsp
Pineapple chunks - 50 ml

Method:

  • Blend together cheese, sugar and orange juice; stir in pineapple.
  • Serve with fruit as dip or topping.

STRAWBERRY MALMAISON

Ingredients:
Oranges - 2
Strawberries - 500 gms
Sugar syrup -125 m (medium consistency)

Method:

  • Section one orange and squeeze juice from the other.
  • Wash strawberries; hull; cut the larger ones in half.
  • Combine berries and orange sections; place in serving dishes.
  • Combine the syrup and juice; pour over berries.

PAN - SAUTEED ASPARAGUS

Ingredients:
Asparagus - 1 kg
Oil - 2 tbsp
Garlic clove - 1 (crushed)
Soya sauce - 1 tbsp

Method:

  • Wash asparagus and cut off tough ends; leaving tips whole, cut stalks into short diagonal lengths.
  • Heat oil in a saucepan, add garlic and asparagus, cover and cook over medium heat until tender but still crisp, about 5 minutes.
  • Shake pan several times during cooking.
  • Stir in soya sauce, toss gently, and serve.

CANADIAN OATMEAL SHORTBREAD

Ingredients:
Butter -1 cup
All purpose flour - 1  cup
Brown sugar - 1/2 cup
Rolled oats - 2 cups
Vanilla essence - 1 tsp
Baking soda - 1/2 tsp

Method:

  • Mix butter, sugar and vanilla until fluffy.
  • Blend flour, soda and oats; stir into butter mixture.
  • Chill 2 hours.
  • Heat oven to 350.
  • Roll dough 1/4" thick on lightly floured board.
  • Cut in 1 1/2 squares or desired shapes.
  • Bake on ungreased baking sheet 10-120 minutes

NOODLES ALFREDO

Ingredients:
Cooked broad noodles - 500 gms
Soft butter - 175 ml
Parmesan or strong cheddar cheese - 500 ml (gated)
Warm cream - 125 ml
Salt and pepper to taste

Method:

  • Thoroughly drain cooked noodles; place in hot casserole with butter; toss gently with fork until noodles are all buttered.
  • Add cheese and toss again; pour in cream and toss again.
  • Season with salt and pepper.

ROLLED OATS CRUST

Ingredients:
Quick cooking rolled oats - 250 gms
Brown sugar - 50 gms
Walnuts - 150 gms (finely chopped)
Butter - 100 gms (melted)

Method:

  • Toast rolled oats in a large shallow pan in the oven at 180 C.
  • Combine with brown sugar and walnuts; add melted butter. Mix well.
  • Press mixture firmly into the pie plate to a thickness of 0.5 cm.
  • Bake until lightly browned.

LEMON VINAIGRETTE SALAD

Ingredients:
Cabbage - 1 cup (shredded)
Lettuce leaves - 5-6
Tomatoes - 2
Fresh cheese - 8-10 cubes
Apples - 2
Pears - 2
Thick cream - 1/2 cup
Lemon juice- 1/4 cup
Olive oil - 1 tsp
Salt - 1 tbsp
A  pinch of pepper - freshly ground
Mint leaves - few

Method:

  • Whisk together lemon juice, salt, pepper and oil. Mix in the cream.
  • Wash and cut the fruits. Add fresh cheese cubes.
  • Arrange lettuce leaves in a salad bowl or a tray.
  • Arrange shredded cabbage and fruit slices.
  • Cut the tomatoes and remove seeds and the pulp. Make slices and add to the salad.
  • Pour lemon cream.
  • Mix well.
  • Decorate with mint leaves and serve.

CANADIAN OATMEAL DROP COOKIES

Ingredients:
All purpose flour - 2 cups (sifted)
Sugar - 1 cup
Baking soda - 1 tsp
Cinnamon powder - 1 tsp
Salt - 1/2 tsp
Shortening - 1 cup
Chopped nuts - 1 cup
Uncooked rolled oats - 2 1/2 cups
Grated lemon peel - -1/2 tsp
Eggs - 3 (well beaten)
Milk - 1/2 cup

Method:

  • Mix flour,sugar, baking soda, cinnamon and salt in a bowl.
  • Cut in shortening with knife until pieces are the size of rice kernels.
  • Mix in nuts, oats, and lemon peel.
  • Add eggs gradually, mixing thoroughly.
  • Mix in milk thoroughly.
  • Drop by teaspoonfuls about 2' apart onto cookie sheets.
  • Bake at 375 F about 10 minutes or until delicately browned.
  • Cool on wire racks.

CANADIAN COFFEE

Ingredients:
Canadian whisky - 1 1/2 ounces
Sugar - 1 tsp
Strong black coffee - 6 ounces
Whipped cream - 1 tbsp

Method:

  • Mix the whisky, coffee and sugar in a mug.
  • Top with the whipped cream.
