Egg yolks - 3
Egg - 1
Evaporated milk- 1 large can
Castor sugar -  2 tsp
Castor sugar for topping


  • Whisk egg yolks with a teaspoon of cold water.
  • Add whole egg and whisk together.
  • Rinse a strong saucepan with cold water and put in evaporated milk.
  • Heat to boiling point and take from heat at once.
  • After a moment or so stir milk gradually into well whisked egg and yolks, mixing briskly all the time. 
  • Return mixture to pan, add sugar and whisk together over low heat until blended, but do not boil.
  • Draw pan from heat and whisk well until cooled.
  • Pour into an ovenproof serving dish and place in the refrigerator until chilled.
  • Sprinkle thickly with castor sugar and put under hot grill for 2-3 minutes until caramel coloured.
  • Serve at once.

Plain flour - 115 gms
Pinch of salt
Butter - 75 gms
Egg- 1
Danish cream - 1 tbsp
Scallop shells - 4
White sauce mix - 1 packet
Shrimps - 75 gms
Asparagus tips - 260 gms
Sherry  - 1 tbsp
Lemon juice - 1 tbsp
Pinch of pepper


  • Sift flour and salt, add butter cut into small pieces and mix lightly with flour.
  • Add egg and cream. Mix lightly to make a soft dough.Leave in the refrigerator for 2 hours to harden.
  • Roll out very thinly. Grease the back of each shell and cover with pastry.
  • Trim the edges and bake in centre of oven for 10-12 minutes. Allow to cool.
  • Make up the sauce mix as directed. Add most of the shrimps and the drained asparagus, reserving a little for garnish.
  • Season well, add sherry, lemon juice and pepper.
  • Heat gently.
  • Pour into hto shells and serve immediately garnished with shrimps ans asparagus.

Butter - 2 tbsp
Vegetable stock - 1/2 cup
Sour cream - 1/2 cup
Pepper powder - 1/2 tsp
Flour - 2 tbsp
Nutmeg powder - pinch
Salt to taste


  • Add flour mixed with seasonings to melted butter. Stir well and gradually add hot vegetable stock. 
  • Allow to thicken before adding the cream. Serve hot.

Cooking apples - 1 kg (peeled, cored and sliced)
Water -3 tbsp
Margarine - 100 gms
Dry brown bread crumbs - 100 gms
Sugar - 50 gms


  • Cook apples with water over low heat. Add sugar to taste and leave to cool.
  • Melt margarine in a frying pan and add breadcrumbs and sugar. 
  • Cook, stirring all the time, till crumbs are browned. Stir off heat white crumbs cool.
  • When cool, place alternate layers of crumbs and apple in a serving dish. Top with crumbs.
  • Decorate with cream and red current jelly if wished.

Apples- 2
Eggs- 3
Vanilla essence- 2 drops
Milk- 1 litre
Sugar- 3 tbsp
Rice flour- 1 tsp
Golden syrup- 1 tsp
Custard- 6 tsp
Powdered nuts- 10 gms

For garnishing:
Apple strips


  • Beat the eggs well and boil the milk. When milk boils, add sugar and stir.
  • Remove from fire and add the beaten eggs when the milk becomes lukewarm.Keep on stirring till it is mixed well.
  • Now add custard power to 3 tsp of warm water and add to the lukewarm milk.Steam it for 30 min.
  • Allow to cool to normal temperature and spread in a dish. Spread strawberry jam like a frill on it and keep in the fridge for half an hour.
  • Dip the thin strips of apple in golden syrup.
  • Take out the custard from the fridge and decorate it with overlapping  strips of apple.
  • Put back into the fridge and serve cold after lunch or dinner.
  • It comes for 6 persons and takes the time of 30 min.

Small new potatoes - 500 gms
Castor sugar- 50 gms
Butter - 50 gms


  • Cook potatoes in boiling salted water until just tender. Drain and keep hot.
  • Place the sugar in a heavy based saucepan and melt over gentle heat, stirring, until light brown.
  • Add the butter and stir until melted.
  • Add the potatoes and toss to coat with the sugar and butter mixture.
  • Serve hot.

Butter - 12 tbsp
Confectioners' sugar - 1 cup
Flour - 2 cups
Salt - 1/2 tsp
Chopped nuts - 1 cup (hazelnuts preferred)


  • Cream butter until foamy. Add sugar; mix well.
  • Sift together flour and salt; add to the butter mixture. 
  • Add nuts and make a stiff dough.
  • In waxed paper form dough into long rolls about 2' round.
  • Chill in refrigerator at least 30 minutes.
  • Slice roll into thin rounds; place them on greased cookie sheet.
  • The thinner the slice is, the thinner the finished cookie will be.
