BASBOUSA

Ingredients:
Water -  1 cup
Coconut milk - 1 cup
Sugar - 1 cup
Fresh lemon juice - 1 tbsp
Butter - 1/2 cup
Semolina - 3/4 cup
Blanched almonds - 3/4 cup (half finely chopped and half whole)

Method:

  • Mix water, coconut milk, lemon juice and sugar.
  • Heat to boiling; lower to heat and simmer while stirring for 5 minutes.
  • Mix chopped almonds with semolina and fry in butter until golden.
  • Add hot thickened syrup slowly to the semolina almond mixture.

EGYPTIAN RICE

Ingredients:
Cooked rice- 3 cups
Fried potato cubes - 1 cup
Fried brinjal cubes - 1 cup
Carrot - 1/2 cup (fried)
Onions - 1/2 cup (fried)
Salt and pepper to taste
Oil - 2 tbsp

Method:

  • Mix all the vegetables with salt and pepper.
  • In a baking dish, put half of the rice at the bottom. pour half of oil.
  • Then put a layer of vegetables and top up with the rice again.
  • Pour the remaining oil over it.
  • Bake in preheated oven for 5-7 minutes
  • Serve hot.
