BUDIDA GUMMADI KAYA HALWA

          బూడిద గుమ్మడికాయ హల్వా 

కావలిసిన వస్తువులు:
బూడిద గుమ్మడి కాయ - 1
పంచదార - 500 గ్రా 
జీడి పప్పు - 50 గ్రా 
కిస్ మిస్  - 20 గ్రా 
యాలుక్కాయ పొడి - 1/2 చెంచా 
పచ్చ కర్పూరం - కొద్దిగా 
కలర్ - చిటికెడు 
నెయ్యి - 125 గ్రా 

తయారీ:

  • బాగా ముదిరిన బూడిద గుమ్మడి కాయ (చిన్నది) కడిగి చెక్కు తీసి, లోపలి గుజ్జు గింజలు కూడా తీసివేసి  తురుముకోవాలి. 
  • తురుము కొనేటప్పుడు వచ్చిన నీళ్ళతో తురుము ఉడికించుకోవాలి. 
  • నీళ్ళు ఇగిరిన తరువాత పంచదార పోసి తిప్పుతూ కొద్దికొద్దిగా నెయ్యి పోస్తూ గట్టి పడేవరకు ఉడికించాలి. 
  • ఒక చెంచ నెయ్యిలో జీడి పప్పు, కిస్ మిస్ వేసి వేయించాలి. 
  • హల్వా గట్టి పడినాక జీడి పప్పు, కిస్మిస్ , ఏలుకపొడి, పచ్చ కర్పూరం, రంగు వేసి బాగా కలుపుకోవాలి. 
  • ఒక పళ్ళానికి నెయ్యి రాసి హల్వా ని అందులో పోసి ముక్కలు కోసుకోవాలి. 
  • ఈ హల్వా చాలా రుచిగా ఉంటుంది

BADAAM HALWA

Ingredients:
Almonds- 1 cup(heaped)
Sugar- 1 1/4 cup
Kesar yellow colour- little
Ghee- 1/2 cup
Saffron- little
Milk- 1/2 cup

Method:

  • Blanch almonds in hot water for 1 hour. Remove outer skin and grind into smooth paste using milk for grinding.
  • Mix little water to sugar and heat it in a thick bottom kadai til it is dissolved and one string consistency is reached.
  • Add badam paste and cook till it becomes thick.Add kesar colour,saffron which is dissolved in hot milk.
  • When the halwa sticks to bottom add ghee little by little and cook till halwa consistency is reached.

COCONUT HALWA

Ingredients:
Coconut - 1
Rice - 250 gms
Sugar - 250 gms
Ghee - 125 gms
Cashew nuts - 10
Kishmish - 10
Cardamom powder - 1/2 tsp

Method:

  • Soak the rice for 2 hours. Grate the coconut and keep aside.
  • Wash and grind the rice to make fine paste by adding little water. Add grated coconut, grind once again to make fine paste.
  • Mix sugar and half cup of water and bring it to boil. Cook till one string consistency arrives.
  • Add cardamom powder and rice coconut paste.
  • Cook in low flame, stir continuously, add little ghee time to time till the halwa leaves the sides.
  • Transfer to greased plate ad decorate with cashew nuts and kishmish.

CAULIFLOWER HALWA

Ingredients:
Cauliflower - 4 cups (chopped)
Sugar - 2 cups
Milk - 4 cups
Ghee - 1/2 cup
Cashew nuts - 20
Turmeric - 1/2 tsp

Method:

  • Boil cauliflower till soft and tender. Mash and sieve it.
  • Fry cashew nuts and keep aside.
  • Boil milk in thick bottom vessel, add sugar and dissolve it.
  • Mix turmeric in little water, stir in milk.Cook in low flame until milk thickens then add cauliflower and mix well.
  • Stir continuously, slowly add ghee, cook till the mixture leaves the sides.
  • Pour this mixture in greased plate.
  • Garnish with cashew nuts and cut into pieces.

KARACHI HALWA

Karachi halwa is one of the famous Sindhi sweetmeats.It is a colored jelly like sweet and is extremely popular with children.

Ingredients:
Plain cornflour - 115 gms
Sugar - 560 gms + Water - 600 ml
Lime juice - 2 tsp
Yellow or red colouring
Cold water - 250 ml
Almonds - 50 gms
Pistachio nuts - 30 gms
Cardamom powder - 1/2 tsp
Ghee - 115 gms

Method:

  • Dissolve the sugar in the water and boil for 5 minutes. Remove from the fire and strain through muslin cloth.
  • Mix corn flour in cold water and add to the syrup.
  • Then add colouring and cook over medium heat, stirring continuously, until mixture turns into a lump.
  • Mix lime juice and continue stirring. When the mixture sticks to the bottom of the pan,add ittle ghee and continue cooking.
  • Repeat the addition of the ghee till the mixture stops sticking o he sides of the pan and becomes one lump.
  • Add dried blanched almonds, pista and cardamom powder. Mix well.
  • Pour the halwa into the greased dish, and press it evenly.
  • When set, cut into diamond pieces.

CHOCOLATE HALWA

Ingredients:
Milk - 500 ml
Sugar - 500 gm
Cocoa powder - 1/4 cup
Bread - 1 slice

Method:

  • Bring to boil the milk in vessel. 
  • When milk starts boiling, add cocoa, sugar, bread pieces. Mix well.
  • Cook in low flame till it becomes thick.
  • Transfer to greased plate. Cool and cut into pieces

GRAPE HALWA

Ingredients:
Seedless grapes - 500 gms
Wheat Milk - 500 ml
Sugar - 250 gms
Cashew nuts - 1 tbsp
Kishmish - 1/2 tbsp
Cardamom powder - 1/2 tsp
Ghee - 1/2 cup

Method:

  • For obtaining wheat milk, soak wheat overnight and grind with sufficient water to make smooth paste.
  • Strain and separate the milk.
  • Wash and blend grapes with out water then strain.
  • Heat little ghee in a pan, fry cashew nuts and kishmish till golden and keep aside. Put the remaining ghee in the same pan, add grape juice and stir for a while. Add sugar and stir continuously till sugar dissolves.
  • Add wheat milk, stir continuously till it thickens.
  • Lastly add fried cashew, kishmish and cardamom powder. Mix well and remove from flame.
  • Serve hot or cool.

PINEAPPLE HALWA

Ingredients:
Pineapple juice - 2 cups
Pineapple pieces - 2 cups (finely chopped)
Maida - 2 cups
Ghee - 2 cups
Water - 2 cups
Cashew nuts - 10
Almonds - 10
Cardamom powder - 1/2 tsp
Cherries - few
Kesar or yellow colour - a pinch

Method:

  • Mix maida, sugar, pine apple juice and water together. Put it in a thick pan and cook in low flame, stirring all the time.
  • When the mixture starts getting thick, add pineapple pieces and ghee little by little, stirring all the time till the mixture leaves the sides of the pan. Add cardamom powder and yellow colour and mix well.
  • Transfer to greased plate and decorate with almonds, cashew and cherries.

Sugar Free Bottle Gourd Halwa

Ingredients:
Bottle Gourd -500 gm
Milk -1 litre
Dates - 10 (chopped)
Raisins - 2 tbsp
Cinnamon powder for garnishing - little

Method:

  • Peel and grate the gourd and keep it aside.
  • Boil chopped dates and raisins in one cup of water for 5-10 minutes.
  • Cool and blend this mixture in a blender.
  • Pour this mixture over grated gourd and mix well.
  • Boil the milk in thick bottom vessel, add gourd mixture.
  • Keep stirring it until thick consistency.
  • Garnish with cinnamon powder and serve hot.

Banana Halwa -2

Ingredients:
Ripe bananas - 8
Sugar - 1/2 cup
Ghee - 1/2 cup
Water - 1 cup
Cardamom powder - 1/8 tsp

Method:
  • Peel and cut the bananas and mash it to paste. 
  • Add the sugar and water and mix it.
  • Cook in low flame and bring them slowly to the boil, stirring constantly.
  • When some of the water evaporated, pour the ghee very slowly, and stir well till all the ghee is blended.
  • Cook till it does not touch stick to your fingers when pressed between them.
  • remove from heat, add the powdered cardamom and mix well.
  • Transfer to greased plate and cut into pieces.

Cashew Nut Halwa

Ingredients:
Milk - 1 litre
Cashew nuts - 150 gm
Sugar - 200 gm
Cardamom powder - 1/4 tsp
Food colour -  a pinch (optional)

Method:

  • Soak cashew nuts for one hour then grind to make smooth paste.
  • Boil the milk in thick bottom vessel and boil till it becomes half.
  • Add cashew nut paste and stir continuously.
  • Cook in low flame for 8-10 minutes then add sugar.
  • Cook till it becomes thick then add colour and cardamom powder.
  • Mix well and transfer to greased plate.

Corn Halwa

Ingredients:
Corn - 4
Sugar - 300 gm
Cardamom powder - 1/2 tsp
Cashew nuts - 1 tbsp (chopped)
Ghee - 1/2 cup

Method:

  • Separate seeds from corn and soak them for one hour.
  • Grind the corn seeds to make smooth thick batter. Add sufficient water while grinding.
  • Strain the batter through muslin cloth for obtaining milk.
  • Now mix corn milk and sugar in a vessel.
  • Cook till it becomes little thick then add ghee.
  • Again cook till it leaves the sides and becomes thick.
  • Lastly add cashew nuts and cardamom powder. Mix well.
  • Switch off the flame.
  • Transfer to greased plate. 
  • Cool and cut into pieces.

Apple Halwa

Ingredients:
Semolina - 1 cup
Apples - 4
Sugar - 2 cups
Milk - 2 cups
Ghee - 2 tbsp
Cardamom powder - 1/4 tsp
Cashew nuts - 1 tbsp (chopped & fried)
Red colour -  a pinch

Method:

  • Peel and grate apples. Heat ghee in a pan, add apple and saute for while.
  • Add semolina and fry till aroma comes. Add milk and cook till soft in low flame.
  • Add sugar, stir continuously till it dissolves. 
  • Add chopped cashew nuts and cardamom powder and cook till it thickens.
  • Soak red colour in 1 tsp of milk and mix in halwa. Mix well and transfer to greased plate.
  • Serve.

Ragi Halwa

Ingredients:
Ragi   - 1 cup
Sugar - 3/4 cup
Milk - 1/2 cup
Ghee - 1 tbsp
Cardamom powder - 1/4 tsp
Cashew nuts - 1 tbsp (chopped)

Method:

  • Soak ragi in hot water for 3 hours. Drain the water and grind to make smooth paste. Add little warm water while grinding.
  • Strain through a muslin cloth or fine sieve and squeeze out to extract milk from it.
  • Add milk to the extract and bring it to boil and stir continuously.
  • Cook till it becomes thick then add sugar keep stirring till it is dissolved.
  • Add ghee and cardamom powder and mix well.
  • When halwa consistency is reached, remove from fire.
  • Transfer to greased plate.
  • Decorate with fried cashew nuts and serve.

Mango Halwa

Ingredients:
Mangoes - 4
Milk - 500 ml
Sugar - 200 gm
Ghee - 4 tbsp
Cashew nuts - 1 tbsp
Kishmish - 1 tbsp
Cardamom powder - 1/2 tsp

Method:

  • Peel and make puree from the mangoes.
  • Put mango puree, sugar and milk in thick vessel and cook in low flame. Stir continuously.
  • Fry cashew nuts and kishmish in little ghee.
  • Add ghee time to time and cook till it thickens.
  • Lastly add cashew nuts, kishmish and cardamom powder.
  • Mix well and transfer to greased plate.
  • Cut into pieces.

Moong Dal Halwa

Ingredients:
Moong Dal - 200 gm
Sugar - 250 gms
Ghee - 400 gms
Mixed dry fruits - 1 cup
Water - 350 gm
Cardamom powder - 1 tsp

Method:

  • Soak dal in water for 2-3 hours. Drain the water and grind it to a fine paste.
  • Heat ghee in a heavy bottomed pan and fry moong dal paste on a low flame.
  • Keep stirring till it is well roasted and starts giving aroma.
  • Meanwhile, boil water, add sugar and stir till it dissolves.
  • Pour sugar syrup into dal paste and stir well till water evaporates and halwa is thick.
  • Add dry fruits and cardamom powder. mix well.
  • Serve hot.

Sapota Halwa

Ingredients:
Sapotas - 8 (medium)
Milk - 250 ml (boiled and cool)
Sugar  - 150 gms
Sweet kova- 50 gm
Butter - 3 tsp
Vanilla Ice Cream - 2 cups
Cashew nuts - few
Chironji - 1 tsp
Cardamom Powder - 1/4 tsp
Vanilla essence - 1 drop
Ghee

Method:

  • Fry cashew nuts, chironji in ghee and keep aside.
  • Peel and mash sapotas to make soft.
  • In a bowl, mix milk, ice cream and sugar and bring it to boil. Stir occasionally.
  • When it starts boiling, add mashed sapota and mix well. Cook fro few minutes.
  • Then add butter and vanilla essence, stir.
  • Add kova and stir continuously.Cook till it becomes thick and leaves the sides.
  • Remove from fire.
  • Add cashew nuts, chironji and cardamom powder. Mix well and transfer to greased plate.
  • Store this for one week.

Milk - Bread Halwa

Ingredients:
Bread packet - 1
Milk - 1 litre
Sugar - 250 gms
Cardamom Powder - 1/4 tsp
Ghee - 1/4 cup

For Garnishing:
Cherries
Dates

Method:

  • Boil the milk in a vessel and make it cool.
  • Remove the edges of bread slices and soak the slices in cold milk for 1 hour.
  • Heat ghee in a kadai, add soaked bread slices and fry them  for a while.
  • Add sugar and cardamom powder and mix well.
  • Cook till the mixture leaves the sides.
  • Remove and transfer to greased plate.
  • Garnish with cherries and date slices.
  • Serve cool.

Coconut - Chocolate Halwa

Ingredients:
Coconut Milk - 1 litre
Corn Flour - 2 cups
Cocoa Powder - 5 tbsp
Sugar - 1 1/2 cup
Peanuts - 1/2 cup
Salt -  a pinch 
Ghee - 1/2 cup
Cashew nuts -  for decorating

Method:

  • In a vessel, pour coconut milk, salt, sugar, corn flour, cocoa powder. Mix without lumps.
  • Now cook the mixture, stirring continuously for 15 minutes.
  • Add ghee and peanuts and cook till it becomes thick and leaves the sides.
  • Transfer this mixture to greased plate.
  • Cool and cut into desired shapes.
  • Garnish with Cashew nuts.

Apple, Banana and Carrot Halwa (ABC Halwa)


Ingredients:
Apple - 1 cup chopped  without skin 
Banana - 1 cup chopped
Carrot - 1 cup grated
Milk - 1 cup  
Ghee - 3/4th  cup
Sugar - 2 cups
Cardamom Powder - 1/4 tsp
Cashew and almonds - 1/4 cup (chopped)


Method:

  • Cook carrot with milk till carrot becomes soft.
  • Add chopped apple and banana, cook till they are soft.
  • Add sugar and cook till it dissolves and halwa becomes thick.
  • Add ghee, cashew and almonds and cardamom powder. Mix well and remove from fire.
  • Serve.
