TOMATO JUICE WITH HERBS

Ingredients:
Tomatoes - 1 kg
Water - 1/2 cup
Small onion - 1 (sliced)
Celery stick - 1 (sliced)
Basil sprigs - 4
Parsley sprig - 3
Bay leaf - 1/2
Salt - 1 tsp
Paprika - 1/3 tsp
Lemon juice - 1 tsp

Method:

  • Place tomatoes in a pan with water, onion, celery and herbs.
  • Simmer until tomatoes are soft. Cool and strain.
  • Add salt, paprika and lemon juice.
  • Chill and pour into glasses before serving.

FRESH HERB SCONES

Ingredients:
All purpose flour - 2 cups
Whole wheat flour - 1/2 cup
Sugar substitute - 1-2 tsp
Baking powder - 2 tsp
Rosemary - 1 tsp (crushed)
Baking soda - 1 tsp
Salt - 1 tsp
Thyme - 1 tsp 
Oregano- 1 tsp
Butter- 1/4 cup
Egg- 1
Buttermilk- 1/2 cup + 2 tbsp

Method:

  • Preheat oven to 400* Celsius. Combine first 9 ingredients in bowl.
  • Cut the butter into small pieces and work into flour mixture with food processor until blended.
  • In a separate bowl beat egg with buttermilk and stir into mixture.
  • Turn dough out on a floured board and knead for 2 minutes.
  • Shape into 2 thick circles,5 inches in diameter.
  • Cut each into quarters and place on lightly greased baking sheet with wedges about 1/2 inch apart.
  • Brush with reserved egg white. Bake for 15-20 minutes. Serve warm.

ORANGE PAPAYA SMOOTHIE

Ingredients:
Ripe papaya - 1 (peeled, seeded and chopped)
Orange juice- 2 cups
Plain yogurt - 1 cup
Cracked rice - 1 cup
Banana - 1 (mashed)
Lemon juice - 1 tsp

Method:

  • Puree or process all the ingredients until smooth.
  • Serve in tall glasses.

PALAK PARANTHAS WITH OATS

 Ingredients:
For Dough:
Powdered Quicker oats - 1/2 cup
Whole wheat flour - 1/2 cup
Ajwain seeds - 1/4 tsp
Skimmed milk - 1/4 cup
Salt

For filling:
Spinach - 2 cups (finely chopped)
Ginger - 1/2 tsp (grated)
Garlic - 1/2 tsp (finely grated)
Green chilli - 2 (finely chopped)
Low fat curd - 2 tsp
Low fat paneer - 50 gms
Salt to taste
Chilli powder - 1/4 tsp

Method:

  • Mix the dough ingredients to make a soft dough with enough water. Cover and keep aside.
  • Heat non stick pan; add ginger, garlic and chilli, and stir.
  • Add curd and saute for 1-2 minutes.
  • Add spinach and cook in low flame till dry. Add salt,chilli powder and mashed paneer.
  • Dry cook for 1-2 minutes. Remove and let it cool.
  • Divide the dough into 3-4 balls. Roll into small flat circle, place the filling and close from all sides.
  • Press over the dry flour and roll into medium size paranthas.
  • Cook paranthas on medium heat, spreading one tbsp of milk on both sides till brown patches appear.
  • Serve hot.

QUINOA TABBOULEH

Ingredients:
Quinoa - 200 gms
Lemon juice - 1 tbsp or as per taste
Olive oil -4 tbsp
Mint - small bunch (chopped)
Flat leaf parsley - small bunch (roughly chopped)
Spring onions - bunch (sliced)
Cucumber - 1/2 (deseeded and diced)
Walnuts - handful (chopped)
Salt and pepper to taste

Method:
  •  Rinse the quinoa well and Place in a pan with about double the volume of water.
  • Bring to the boil, cover, reduce the heat  and gently simmer for 10 minutes or until the grain unwraps itself.
  • Turn off the heat and leave to cool slightly, then drain any remaining water.
  • Season the quinoa with salt and pepper, stir in the lemon juice and oil and leave to cool fully.
  • Stir in the other ingredients, then serve.

SEMOLINA BUTTERMILK KANJI

Ingredients:
Semolina - 75 gms
Ghee - 2 tsp
Water - 750 ml
Salt to taste
Sour buttermilk as required

Method:

  • Heat the ghee in a pan; add semolina and fry until reddish brown. Then add water and cook. Stir continuously without lumps.
  • When it is completely cooked; remove from flame.
  • Add salt and sour buttermilk and serve.

QUAKER OATS SATTU

Ingredients:
Roasted and powdered quaker Oats - 20 gms
Sattu powder - 30 gms
(wheat flour - 10 gms + Barley flour - 10 gms + Dry peas flour - 10 gms)
Sugar to taste

Method:

  • Mix oats with sattu powder.
  • Add water and sugar to sattu powder.  Stir well.
  • Serve chilled.

BASIC GRANOLA

Ingredients:
Whole wheat flour - 125 gms
Rolled oats - 250 gms
Brown sugar - 225 gms
Butter - 225 gms (melted)
Water - 120 ml

Method:

  • Preheat the oven to 1eheat oven to 150 C.
  • mix the dry ingredients, along with a pinch of salt.
  • Whisk together the melted butter and the water.
  • Pour over the dry ingredients and combine thoroughly.
  • Spread out on baking sheets and bake for 25-30 minutes, until crisp and lightly browned.
  • Cool on trays and store in airtight containers.
To serve:
Add grated coconut, raisins, dried cranberries, peanuts, almonds or other nuts, sunflower seeds, and spices such as cinnamon and nutmeg.

INSTANT JOWAR UTTAPAM

Ingredients:
Jowar(white millet) - 1/4 cup
Urad dal - 1 tbsp
Ginger chilli paste -  1 tsp
Fruit salt - 1/2 tsp
Oil - 2 tsp
Tomatoes - 2 tbsp (chopped)
Coriander leaves - 1 tbsp (chopped)

Method:

  • Wash and soak the jowar and urad dal in enough water separately overnight. Drain and blend them together in a mixer to a fine paste using little water.
  • Add the ginger chilli paste, fruit salt and salt to it and mix gently.
  • Pour a laddleful of this batter and pour it on a hot greased non stick pan and spread it evenly to make a uttapam.
  • Sprinkle tomatoes and coriander on top and cook well on both sides using a little oil.
  • Serve hot.

MUTTON LEG SOUP (MEKA KALLA RASAM)

Ingredients:
Goat legs - 4
Ginger - 1" piece
Coriander seeds - 1 tbsp
Cardamom - 4
Cloves - 4
Cinnamon sticks - 4
onion - 1
Garlic pod - 1
Chilli powder - 1 tbsp
cumin seeds - 1 tsp
Turmeric - 1/2 tsp
Salt to taste
Oil/Ghee - 1 1 /2 tbsp

Method:

  • Grind ginger, coriander seeds, garlic, chilli powder along with 2 cloves, 2 cardamom, 2 cinnamon sticks to make fine paste.
  • Finely chop onions.
  • Heat 6 glasses of water; add chopped onion and mutton legs and bring to boil.
  • When water becomes 1/3 rd of its quantity; add ground paste, salt, turmeric and simmer for 10 minutes.
  • Heat the ghee in small pan; add remaining cloves, cardamom, cinnamon and bay leaf. Fry and pour over soup.
  • Serve hot or warm.

FRUITY OAT CEREAL

Ingredients:
Rolled oats -  1/2 cup
Water - 1 13/4 cups
Dried mixed fruit - 1/2 cup
Dried apricots - 4 (chopped)
Apple - 1/2 (grated)
Honey - 1 tsp

Method:

  • Combine all ingredients except honey in a microwave safe bowl.
  • Cook on high powder for 5-6 minutes or until mixture thickens.
  • Stir in honey and serve.

MUSHROOM CROQUETTES WITH OATS

Ingredients:
Quicker oats - 50 gms
Mushrooms - 1/2 cup (finely chopped)
Onion - 1 (finely chopped)
Skimmed milk - 150 ml
Salt and pepper to taste
Coriander leaves - 3-4 tbsp
Green chillies - 2 (chopped)
Oil -1 tbsp

Method:

  • Heat a non stick pan; add onion and saute till light pink.
  • Add mushrooms ad saute for 2 minutes.
  • Add oats and milk, stirring continuously. Cook till batter thickens and starts leaving the sides of the pan.
  • Add salt and pepper. Remove from fire.
  • Add coriander and chillies. Mix well and cool the mixture.
  • Shape the mixture into 7-8 croquettes (oblong rolls with flat sides).
  • Grill in oven for 10-15 minutes. Turn the side once after 5 minutes.
  • Serve hot with ketchup and toasts.

BARLEY WATER

Ingredients:
Barley - 1 tbsp
Water - 1 litre

Method:

  • Boil barley in water for 8-10 minutes or till the barley cooked.
  • Strain and serve with little sugar or salt or lemon juice.
  • It is a best medicine for urinary track infection and also for weight reduction.

UDUKU MIRIYAM (PEPPER POWDER)

Ingredients:
Dry coconut - 1/2 (grated)
Pepper corns - 1 tbsp
Red chillies - 4
Salt - 2 tbsp
Garlic - 100 gms
Turmeric - 1/4 tsp
Ghee- 2 tbsp
Mustard seeds - 1/2 tsp
Curry leaves - few

Method:

  • Grind garlic cloves coarsely and keep aside.
  • Grind dry coconut, pepper corns, red chillies, salt and turmeric to make powder.
  • Heat ghee in kadai, add mustard and curry leaves. Allow them to crackle.
  • Add garlic paste; stir till the aroma comes then add ground powder.
  • Mix well and cook in low flame for 3 minutes.
  • let it cool and transfer to airtight jar.
  • Serve with   steamed rice and melted ghee.
  • This is good for Balintha  (for newly delivered mothers)

RED MILLET PUDDING (RAGI PUDDING)

Ingredients:
Ragi flour - 200 gms
Coconut - 1/2 (grated)
Sesame seeds -1 tsp
Jaggery - 50 gms
Cashew nuts -1 tbsp
Cardamom powder - 1/8 tsp
Ghee
Salt

Method:

  • Mix Ragi flour, grated coconut, Sesame seeds, Grated jaggery, pinch of salt in water to make dough.
  • Press evenly and steam cook for 15 minutes or till done.
  • Fry cashews in ghee.
  • Remove pudding from vessel, top up with cashew nuts, sprinkle cardamom powder.
  • Pour hot ghee on pudding and serve immediately.

RAGI ROTI

Ingredients:
Ragi flour - 1 glass
Water - 3/4 glass
Onions - 2
Green chilies - 10
Salt - 1 tsp
Sugar - 1/2 tsp
Ghee - 1 tsp

Method:

  • Finely chop onions; grind green chillies and salt to make paste.
  • Bring to boil the water along with onions, chili paste, sugar and ghee.
  • When water starts boiling, pour ragi flour, close the lid then remove from the flame.
  • Keep aside for 5 minutes then mix thoroughly to make dough.
  • Divide the dough equally and make roti's.
  • Heat the pan; cook the roti's both sides in medium flame.
  • Serve immediately.

WHEAT CHOCOLATE CAKE

Ingredients:
Wheat flour - 100 gms
Sugar - 50 gms
Ghee - 50 gms
Cashew nuts - 1 tbsp (chopped)
Kishmish - 1 tbsp (chopped)
Cocoa powder - 2 tsp
Baking soda- 1 tsp
Apple - 1 (peeled and grated)
Grated Coconut - 1 tsp
Milk - as required

Method:

  • Take 1 tsp of ghee, fry cashew nuts and kishmish till golden. Remove and keep aside.
  • Add remaining ghee, saute wheat flour in low flame, stir continuously till aroma comes.
  • Grind sugar, apple and milk to make smooth batter.
  • Stir wheat flour, cocoa powder, baking soda in batter.
  • Grease tin with little ghee, pour the batter in it and top up with nuts, coconut and kishmish.
  • Steam cook for 15 minutes.
  • Remove and let it cool.

PAPAYA MILK

Ingredients:
Milk - 3 cups
Papaya - 150 gms
Sugar - 4 tsp
Cardamom powder -  a pinch (optional)

Method:

  • Peel and puree the papaya.
  • Boil the milk and remove from the flame.
  • Add sugar and papaya puree and mix well.
  • Serve in tall glasses and sprinkle cardamom powder.
  • Healthy drink for children.

SEMOLINA KANJI

Ingredients:
Semolina - 75 gms
Sugar to taste
Milk - 500 ml
Cardamom powder -  a pinch
Ghee - 2 tsp

Method:

  • Fry semolina in 2 tsp of ghee, to a reddish brown colour. 
  • Add 3 cups of water and bring to boil, stirring all the while.
  • When it is cooked well and soft, add sugar and milk to taste.
  • Add cardamom powder and serve.
