BANANA KULFI

Ingredients:
Milk - 1 litre
Banana pulp - 3 tbsp
Sugar - 5-6 tbsp

For garnishing:
banana pieces and cherries

Method:

To  make the banana puree:

  • peel the bananas and mash with a fork. Mix with 1 tsp sugar syrup and blend gently with a fork for a smooth pulp.
To prepare the kulfi:
  • Boil the milk in thick bottom vessel. Reduce the flame and stir from time to time, taking care it does not burn at the bottom.
  • Boil and thicken the milk till it reduced to 1/4th of its quantity.
  • Mix in the sugar and stir till the sugar melts.
  • Remove and allow it to cool.
  • Mix in the banana pulp and mix gently. 
  • Pour into kulfi moulds and freeze overnight until it sets.
  • Unmould and serve with slices of fresh banana and cherries.

Tutti Frutti Kulfi

Ingredients:
Milk - 1 litre
Sugar - 6-7 tbsp
Tutti frutti - 3 tsp

Method:

  • Boil the milk in thick bottom pan. Boil in low flame, stir from time to time, taking care that it does not burn at the bottom. 
  • Boil the milk till it reduces to 1/4th of its quantity.
  • Add sugar and stir till sugar melts.
  • Remove from fire and allow it to cool.
  • Mix 2 tsp of tutti frutti to milk and mix gently.
  • Pour into kulfi moulds  or containers. Cover with the lid and freeze in the freezer for overnight.
  • Loosen the sides with knife. 
  • Serve garnished with remaining tutti frutti.

KULFI

INGREDIENTS:
Milk - 2 ltr
Pista - 1 tbsp
Almonds - 20
Cardamom - 5
Sugar - 5 tbsp
Kewra Essence - 1/2 tsp


Method:

  • Soak almonds in warm water for 5 minutes then remove the skin. Slice them. Slice the pista thinly.Powder the cardamom.
  • Put the milk in wide and thick bottom kadai, and bring it to boil till it becomes half by stirring occasionally.
  • Now add sugar and cook till it melts.
  • Add chopped pista, almonds and cardamom powder, essence, stir well and remove from fire. 
  • Allow it to cool and pour the mixture into kulfi moulds, cover it with foil and freeze till it set.
  • To unmould, Kept the moulds outside from refrigerator for 5 minutes then unmould with sharp knife by inserting it to the edges carefully.
