MACARONI SALAD

Ingredients:
Elbow macaroni - 100 gms
Lemon juice - 11/2 tbsp
Vinegar - 2 tbsp
Olive oil - 1 1/2 tbsp
Chives - 2 tbsp (chopped) or
Onion -1 tsp (grated)
Celery stalks - 3-4 stalks (diced)
parsley - 3 tbsp (chopped)
Canned pimento - 2 tbsp (chopped)
Olives - 12 stuffed (chopped)
Sour cream - 3 tbsp
Tomatoes - 1-2 for garnish
Salt and pepper
Lettuce

Method:

  • Cook the macaroni in plenty of salted boiling water until just tender - 'al dente'.
  • Mix the lemon juice, oil and vinegar well together.
  • When the macaroni is cooked, drain it well and while still hot, toss in the dressing, then set aside to cool.
  • Mix all the other ingredients, season with salt and freshly ground pepper.
  • When ready to serve, mix with the macaroni and arrange on a bed of lettuce.
  • Garnish with slices or wedges of tomato.

COLD MACARONI SALAD

Ingredients:
Macaroni - 1 cup (boiled)
cabbage - 1/4 cup (shredded)
Tomato ketchup - 2 tbsp
Salt to taste
Red chilli powder- 1/4 tsp
Vinegar - 1/2 tsp
Sugar - 1 tsp
Coriander leaves - 2 tsp

Method:

  •  in a bowl, mix all the ingredients with macaroni.
  • Serve cold.

MACARONI AND CHEESE

Ingredients:
Small elbow macaroni - 350 g
Cottage cheese - 225 g
Soured cream - 225 ml
Egg - 1 (lightly beaten)
Salt - 3/4 tsp
Black pepper - pinch
French mustard - 2 tsp
Strong cheddar cheese - 225 g (grated)

Method:

  • Preheat the oven to 200 C. Cook the macaroni according to packet directions.
  • Meanwhile, in a large bowl, combine the cottage cheese, soured cream, egg, salt, pepper, mustard and half the cheese.
  • Drain the macaroni thoroughly in a colander, and toss with the cheese mixture in the bowl. 
  • Spread the mixture evenly in a greased, shallow ovenproof dish. Top with the remaining cheese, and bake for 30-35 minutes, or until set. 
  • If the macaroni and cheese are browning too quickly, cover with foil after 20 minutes of baking.

BAKED MACARONI IN FOUR CHEESES

Ingredients:
Elbow macaroni - 500 gms
Mozzarella cheese - 60 gms
Sharp cheddar cheese - 60 gms
Swiss cheese - 60 gms
Romano or Parmesan cheese - 4 tbsp
Melted butter - 125 gms

Method:

  • Cook macaroni until barely tender; drain. Save 1/2 cup water.
  • Put macaroni in buttered baking dish.
  • Cut cheddar, mozzarella and swiss cheeses into small slivers; mix together.
  • Add to macaroni; toss lightly.
  • Mix butter and hot water together; pour over macaroni.
  • Sprinkle with grated cheese.
  • bake about 15 minutes in 400F oven.

SPICED TOMATO MACARONI

Ingredients:
Macaroni - 500 gms
Margarine - 50 gms
Flour - 50 gms
Milk - 750 ml
Tabasco sauce - 2 tsp
Tomato puree - 2 tbsp
Cheese - 250 gms (grated)
Salt and pepper
Bacon - 200 gms (chopped and fried)

Method:

  • Preheat oven to moderate, 350 F.
  • Cook macaroni i boiling salted water for about 10 minutes.
  • Meanwhile, make a sauce by melting margarine and adding flour.Stir in milk gradually, add Tabasco, tomato puree, 150 gms of cheese, and seasoning.
  • Drain macaroni and add to sauce in pan.
  • Add fried bacon pieces and mix well.
  • Place in an ovenproof dish, sprinkle with remaining grated cheese and bake in centre of oven for about 30 minutes.

MACARONI AND CHEESE CASSEROLE

Ingredients:
Butter - 50 gms
Flour - 50 gms
Milk - 600 ml
Cheddar or any hard cheese - 175 gms (grated)
Salt and freshly ground pepper
Macaroni - 100 gms
Dried bread crumbs - 25 gms

To Garnish:
Butter - 15 gms (cut into small pieces)

Method:

  • Melt the butter in a saucepan, add the flour and cook over a very low heat for a few minutes until the mixture turns quite liquid, stirring constantly.
  • Add the milk very slowly, a cupful at a time, and stir until smooth before adding any  more.
  • Bring to the boil, stirring, then lower the heat and simmer until the sauce thickens. 
  • Add all but 2 tbsp of cheese. Stir until it has melted, then remove from the heat, season to taste and leave to cool.
  • Cook the macaroni as per the instructions o the packet in plenty of boiling salted water until just tender.
  • Drain, rinse in cold water and drain again.
  • Butter a oven proof baking dish; put in a layer of the macaroni and pour over a thick layer of the sauce. Repeat and finish with a layer of sauce.
  • Mix the remaining cheese with bread crumbs and sprinkle on top.
  • Bake in a hot oven 200 C for 1 hour or until heated through and bubbling.
  • Serve hot, straight from the cooking dish, accompanied by green salad.

PASTA WITH INDIAN SPICES

Ingredients:
Macaroni - 200 gms
Tomato puree - 100 gms
Tomato ketch up - 3 tbsp
Ginger garlic paste - 2 tsp
Chili powder- 1 tsp
Cumin powder - 1 tsp
Salt to taste
Fresh cream - 1/2 cup
Oil - 3 tbsp

For garnishing:
Coriander leaves

Method:

  • Boil the macaroni in salted water till tender.Drain the water and keep aside.
  • Heat oil in sauce pan, add cooked macaroni, and all other ingredients.
  • Mix well and cook on a low flame for 5-6 minutes.
  • Serve hot garnished with coriander leaves.

MACARONI SALAD

Ingredients:
Macaroni - 1 cup
Tomato sauce - 1 tbsp
Lettuce leaves - 1 tbsp (chopped)
Coriander leaves -  1 tbsp (chopped)
Salt 

Method:

  • Cook macaroni in salted water till tender and drain well.
  • Mix macaroni with the remaining ingredients. Toss well.
  • Serve.

                                 
                                 మేకారోని సలాడ్ 

కావలిసిన వస్తువులు:
మకారోని - 1 కప్
టమాటో సాస్ - 1 tbsp
లెట్టుస్ ఆకు - 1 tbsp (తరిగినది)
కొత్తిమీర - 1 tbsp  (తరిగినది)
ఉప్పు

తయారీ:

  • ఉప్పు నీళ్ళలో మకారోని మెత్త పడేవరకు ఉడికించి నీరు వంచేయాలి. 
  • ఒక గిన్నెలో మకారోని మిగిలిన వాటితో  బాగా కలపాలి. 
  • సర్వ్ చెయ్యండి

MACARONI AND RICE SPICY PUDDING

Ingredients:
Milk - 1 litre
Rice - 250 gms
Macaroni - 100 gms
Butter - 4 tsp
Cloves - 2
Bay leaf - 1
Cardamoms - 2
Cinnamon - 1"stick
Onion - 1
Ginger paste - 1 tsp
Garlic paste - 1 tsp
Tomatoes - 2 (paste)
Salt - 1/4 tsp
Red chilli powder - 1/4 tsp
Pepper powder - 1/4 tsp
Cumin seeds - 1/3 tsp
Red chillies - 2
Green chillies - 2
Green coriander - small bunch

Method:

  • Boil water with 1/2 tbsp salt then add macaroni and cook on low flame for 15 minutes or until tender. Remove from fire and drain it. Rinse with cold water and keep it aside.
  • Wash and soak the rice for 10 minutes. Take a thick bottom vessel, put milk and rice in it.
  • Add cloves, bay leaf, cardamom and cinnamon and bring it to boil. Cook it in low flame and keep stirring.
  • When the rice is almost done, add macaroni and keep stirring the mixture constantly until it thickens. Remove from flame.
  • Heat 2 tsp of butter, add chopped onion and fry till little brown. Add ginger garlic paste, tomato paste, black pepper, salt and chilli powder. Stir until the masala leaves the oil. 
  • Add the masala to the rice pudding, mix them well.
  • Heat remaining butter, add cumin seeds, red chillies, green chillies and fry them.
  • Arrange the pudding in square dish, pour talimpu on top of it and decorate with chopped coriander leaves.
  • Serve hot.

Macaroni Hot Pot

Ingredients:
Macaroni - 50 gms 
Capsicums - 2
Tomatoes - 4
Onions - 3
Ginger - 1"piece
Baked Beans - 1 tin
Cheese - 100 gms (grated)
Red chilli powder - 1 tsp
Tomato Sauce - 1 cup
Salt to taste
Butter - 3 tbsp

Method:

  • Boil macaroni, drain the excess water and keep aside.
  • Finely chop onions, ginger. Slice the capsicums into round shape.
  • Make a puree of tomatoes and keep aside.
  • Heat butter in apan, add onions and fry them for 3-4 minutes. Add ginger, red chilli powder and tomato puree and cook for 5 minutes.
  • Now add baked beans, macaroni, tomato sauce and salt. Mix well.
  • Remove from fire and transfer to greased baking bowl. Place capsicum slices and top up with grated cheese.
  • Bake in a moderately hot oven for 15-20 minutes.
  • Serve hot.

Macaroni with Cheese

Ingredients:
Macaroni - 250 gms
Maida - 6 tbsp
Butter - 3 tbsp
Milk - 3 cups
Cheese - 2 1/4 cups
Fresh pepper powder - 1/4 tsp
Salt to taste
Oil - 2 tbsp

Method:

  • Boil macaroni in salted water till it is soft Drain the water completely and keep aside.
  • Heat butter in sauce pan, slowly add maida, stir continuously for i minute. Add milk slowly and cook in low flame without lumps, Stir continuously other wise lumps form. Cook till the sauce thickens.  Remove from fire and add grated cheese, pepper and salt, Mix well.
  • Now place macaroni in serving dish top up with cheese sauce.
  • Serve immediately.
