OMELET FU YUNG

Ingredients:
Finely chopped onion - 3/4 cup
Cooked peas - 2 tbsp
Canned bean sprouts - 2 tbsp(well drained)
Trimmed mushrooms - 50 gms (thinly sliced)
Eggs - 3
Salt to taste
Cold water - 2 tbsp
Soya sauce - 1 tsp
Spring onion - 2 tbsp
Butter - 1 tbsp

Method:

  • Melt butter, uncovered in a 20 cm shallow round dish.Allow 3/4 minute at defrost setting.
  • Mix in onion, cover dish with plate then cook 2 minutes at full powder.
  • Uncover and stir in green peas, bean sprouts and mushrooms.
  • Cover as above and cook for 1 1/2 minutes. Remove from oven.
  • beat eggs very thoroughly with salt, water and soya sauce.
  • Pour evenly over ingredients in dish.
  • Cook 5 minutes uncovered at full power.
  • Stand one minute, cut into 2 portions and transfer to plates.
  • Garnish with spring onion.
  • Serve immediately.
  • Or beat the eggs thoroughly with salt, cold water and soya sauce.
  • Add remaining ingredients and mix well.
  • Heat the butter in non stick pan, pour the egg batter and spread evenly.
  • Cook in low flame both sides till done.
  • Serve immediately.

DRIED APRICOT JAM

Ingredients:
Dried apricots - 225 gms
granulated sugar - 900 gms
Lemon juice - 1

Method:

  • Soak apricots overnight in 600 ml of water.
  • Put apricots with water into a large bowl.
  • Cook, uncovered, for 15 to 20 minutes at full powder or until fruit is soft and tender.
  • Add sugar and lemon juice. Return to microwave. Leave uncovered and cook about 5 minutes when sugar should be dissolved. Stir twice.
  • Continue to cook, uncovered, a further 20 to 25 minutes at high or until setting point is reached.
  • Leave until lukewarm then transfer to dried jar.

Granola

Granola is one of the Americas's most popular  break fast with cereal mixes.

Ingredients:
Butter - 100 gm
Rolled oats - 250 gm
Coarse bran - 40 gm
Soft dark brown sugar - 100 gm
Walnuts - 75 gm (finely chopped)
Seedless raisins - 100 gm
Golden syrup/ Honey - 100 gm

Method:

  • Put butter into a 10" round glass dish. Add syrup.Leave uncovered and melt 4 minutes at defrost setting.
  • Add and mix all the remaining ingredients except raisins.
  • cook uncovered for 9 minutes at full power, stirring  4 or 5 times so that granola browns evenly and become the colour of brown bread crust.
  • Remove from the oven, add raisins and mix in well.
  • Leave to stand until crispy and cold, stirring from time to time until crumbly.
  • Store in an airtight container.

Chicken Tikka

Ingredients:
Boneless Chicken - 500 gm
Ginger paste - 2 tsp
Garlic paste - 2 tsp
Chilli powder - 1 tsp
Salt to taste
Garam masala - 1 tsp
Lemon juice - 1 tbsp
Thick curd - 1/2 cup
Tandoori colour -  a pinch
Oil - 3 tbsp

Method:

  • Wash and cut the chicken  into small pieces.
  • Rub the chicken pieces with ginger garlic paste, salt, chilli powder, garam masala, lemon juice and oil. Keep aside for one hour.
  • Add beaten curd and tandoori colour and mix well. Refrigerate for 6-8 hours the marinated chicken.
  • Preheat the grill or barbecue and put the chicken pieces on the skewers. Baste with the marinade and cook under the grill or keep the skewers on a greased wire rack of the barbecue.
  • Turn them 2-3 times for even cooking. Brush with oil, remove from skewer when cooked.
  • Sprinkle chaat masala.
  • Serve hot with sliced onions.
