CHOCO MANGO MUFFINS

Ingredients:
Maida - 50 gms
Condensed milk - 100 gms
Cocoa powder - 1 tbsp
Butter - 1 tbsp
Baking powder  - 1/4 tsp
Baking soda - 1/4 tsp
Milk - 50 ml

For the mango cream:
Fresh cream - 150 gms
Icing sugar - 1/3 cup
Mango essence - 1/2 tsp
Orange and yellow (mixed) colour - few drops

For moistening:
Mango fruiti - 1/2 cup

Method:

  • Preheat oven at 250 C for 10 minutes. Grease and dust the muffin mould.
  • Beat together all the ingredients for the muffins.
  • Pour into 6 cups and place in the oven. Reduce the temperature of oven to 180 degrees.
  • Bake for 10 - 12 minutes; till fluffy. Cool and unmould.
  • Whip together the cream, icing sugar, essence and colours.
  • Cut the cooled muffins into half; and moisten with mango fruiti.
  • Spread some cream in the middle of the muffins and on the top decorate cream with piping bag.
  • Decorate with chocolate and mango slices. Chill before eating.

BANANA BLUEBERRY CAKES

Ingredients:
Butter- 125 gms
Milk- 125 ml
Eggs- 2
Caster sugar- 220 gms
Mashed banana- 1/2 cup
Self-raising flour- 225 gms
Frozen blueberries- 75 gms

Method:

  • Line 12-hole(80 ml capacity) muffin pan with paper-lined foil muffin cases.
  • Place butter and milk in small pan; stir over low heat until butter melts.
  • Beat eggs in a small bowl with electric mixer until thick and creamy; gradually add sugar, beating until dissolved between additions; stir in banana.
  • Fold in sifted flour and cooled butter mixture, in 2 batches.
  • Divide mixture among muffin cases; bake in moderate oven for 10 minutes.
  • Remove pan from oven; press frozen blueberries into tops of cakes.
  • Bake in moderate oven for about 15 minutes. Turn onto wire rack to cool.

RASPBERRY BRAN MUFFINS

Ingredients:
Fresh or frozen raspberries - 1 cup
All purpose flour - 1 cup
Unprocessed wheat bran - 1 cup
Sugar - 1/4 cup
Baking powder - 1 tbsp
Salt - 1/4 tsp
Beaten egg - 1
Milk - 1 cup
Cooking oil - 1/4 cup

Method:

  • Partially thaw frozen raspberries. Do not completely thaw.
  • In a medium mixing bowl stir together flour, bran, sugar, baking powder and salt. Make a well in the centre.
  • In a small mixing bowl, combine egg, milk, and oil; add all at once to flour mixture. Stir just till moistened. Fold in raspberries.
  • Grease bottoms of muffin cups or line with paper bake cups. Fill 2/3 rd full.
  • Bake in a 400 oven about 20 minutes or till done.
  • Remove and cool slightly on wire racks.

POPOVERS

Ingredients:
Flour - 1 cup
Salt - 1/4 tsp
Eggs -2 (beaten)
Milk - 1 cup
Shortening - 1 tbsp (melted)

Method:

  • Preheat oven to 450 F.
  • Sift flour and salt together.
  • Mix eggs, milk, and shortening; add gradually to flour.
  • Beat until smooth, with egg whisk or beater about one minute.
  • Pour into greased popover tins or Pyrex cups or Muffin cups to 1/3 full.
  • Bake 20 minutes at temperature given.
  • Reduce heat to 350 F; bake 15 minutes, until popovers are firm.

BASBOUSA

Ingredients:
Water -  1 cup
Coconut milk - 1 cup
Sugar - 1 cup
Fresh lemon juice - 1 tbsp
Butter - 1/2 cup
Semolina - 3/4 cup
Blanched almonds - 3/4 cup (half finely chopped and half whole)

Method:

  • Mix water, coconut milk, lemon juice and sugar.
  • Heat to boiling; lower to heat and simmer while stirring for 5 minutes.
  • Mix chopped almonds with semolina and fry in butter until golden.
  • Add hot thickened syrup slowly to the semolina almond mixture.

APPLE MUFFINS

Ingredients:
Maida - 1 cup
All spice powder - 1/2 tsp
Brown sugar - 1/3 cup
Prunes - 1/4 cup (chopped)
Margarine or butter - 80 gms (melted)

egg - 1 (lightly beaten)
Apple puree - 140 gms

Method:

  • Preheat oven to a moderate 180 C.
  • Brush muffin tins with oil. Sift flour and spice into a medium mixing bowl.
  • Add sugar and chopped prunes. Make a well in the centre.
  • Add combined margarine, egg and apple puree.
  • Using a metal spoon, stir until the mixture is smooth.
  • Place the mixture in muffin tins.
  • Bake for about 15-20 minutes or until it is lightly golden.
  • Cool and serve.

COFFEE BRAN MUFFINS

Ingredients:
Unprocessed wheat bran - 1 1/2 cup
All purpose flour - 1  1/3 cup
Baking soda- 1 tsp
Butter/margarine - 1/4 cup (at room temperature)
Sugar - 1/2 cup
Low fat buttermilk - 1 cup
Strong cold coffee -1/2 cup
Dark corn syrup - 1/4 cup
Egg - 1
Raisins - 3/4 cup

Method:

  • In a large bowl, stir together wheat bran, flour, and baking soda.
  • In a medium size bowl, beat butter and sugar until smoothly blended.
  • Add buttermilk, coffee, corn syrup, and egg; beat until blended.
  • Add coffee mixture to flour mixture.
  • Stir just until dry ingredients are evenly moistened, stirring in raisins with last few strokes (batter will be thin).
  • Spoon batter into 12 oiled or paper lined 2 1/2" muffin cups; cups will be full.
  • Bake in a 375 degrees oven until tops of muffins spring back when finely pressed (about 25 minutes).
  • Serve warm or cool.

AVOCADO SULTANA MUFFINS

Ingredients:
Wholemeal plain flour - 1 1/2 cups
Baking powder - 2 tsp
Mixed spice - 1/4 tsp
Sugar - 1/2 cup
Sultanas - 1/2 cup
Egg - 1
Vanilla essence - 1/4 tsp
Buttermilk - 1 cup
Soft butter - 80 gms
Avocado - 1 cup (mashed)

Method:

  • Sift flour with baking powder and mixed spice.
  • Add sugar and sultanas. Make a well in the centre.
  • Beat together egg, vanilla, buttermilk and soft butter and mashed avocado.
  • Pour in the centre of dry ingredients and mix enough just to blend in.
  • Spoon into greased muffin tins and bake at 190C for 20-25 minutes until golden brown.
  • Serve hot with butter and honey.

Hot Muffins

Ingredients:
Flour - 2 cups
Milk - 1  1/2 cups
Sugar - 2 tbsp
Egg - 1
Baking powder - 2 tsp
Baking soda - 1/2 tsp
Salt - 1/2 tsp
Ghee or shortening - 2 tbsp
Honey

Method:

  • Sift flour, baking powder, soda and salt twice.
  • Beat the egg and sugar together.
  • Add milk and melted shortening.
  • Now stir  dry ingredients and mix lightly with your fingertips, till the batter becomes creamy.
  • Grease muffin tins, half fill each with batter,
  • Bake in preheated oven for 30 minutes or needle inserted into center comes out clean.
  • Serve hot with honey.

Tutti Frutti Muffins

Ingredients:
Maida - 250 gms
Sugar - 200 gms (Powdered)
Tutti Frutti - 200 gms
Cashew nuts - 200 gms
Butter - 180 gms
Vanilla essence - 1 tsp
Baking powder - 1 tsp
Baking Soda - 1/2 tsp
Eggs - 3


Method:

  • Sift Maida, baking powder, baking soda twice.
  • Mix butter and powdered sugar well with blender.
  • Add beaten eggs and vanilla essence, blend again to mix well. Blend till the mixture is smooth.
  • Add flour a little at a time , stir continuously and no lumps should form. 
  • Add tutti frutti, cashew nuts and stir well .
  • Grease the muffin trays and pour the mixture into individual muffin case up to 2/3 level..
  • Preheat the oven for 10 minutes.
  • Place the tray in the oven and bake for15-20 minutes. Insert a tooth pick in the center of muffin and if it comes out clean,it is baked.
  • Transfer it to wire rack and let it cool for 5 minutes and then remove from muffin cases.
